Job Description

We’re looking for a passionate and driven Sous Chef – Pastry to support the leadership of our pastry kitchen and help drive high-quality, creative offerings across restaurant and event service.

In this hands-on leadership role, you’ll work closely with the Head Chef and Executive Chef to oversee daily pastry operations, ensuring consistency, quality and efficiency across the resort. You’ll play a key leadership role in guiding the team, maintaining standards and contributing to menu development in a fast-paced and rewarding environment.

Key Responsibilities:

  • Lead and support the day-to-day operations of the pastry kitchen
  • Deliver high-quality pastry across à la carte and conference & events service
  • Drive menu development and contribute fresh, creative ideas
  • Maintain consistency, presentation and food safety standards across all production
  • Lead, train and develop junior chefs
  • Coordinate with wider kitchen teams to ensure smooth and efficient service
  • Support stock control, ordering and waste management practices
  • Foster a positive team culture and continuous improvement mindset

Qualifications

  • Trade qualified in Patisserie with strong pastry experience in a hotel or similar environment
  • Proven experience in high-volume or conference & events operations highly regarded
  • Strong knowledge of food safety, HACCP and kitchen compliance standards
  • Creative approach with strong attention to detail and presentation standards
  • Demonstrated ability to lead by example and support team development
  • Strong organisational skills and ability to perform under pressure
  • Positive, professional attitude with a genuine passion for pastry and teamwork
