Rejoignez le restaurant Morimoto, dirigé par le chef renommé Masaharu Morimoto (vainqueur d’Iron Chef aux États-Unis), unique en Europe pour sa cuisine japonaise fusion mariant traditions japonaises et influences internationales. Vous êtes passionné(e) et motivé(e) pour intégrer l'équipe du restaurant Morimoto Bordeaux (+ de 180 couverts indoor et outdoor) dans un univers lifestyle, festif et unique en son genre.
Rattaché(e) Chef Exécutif, vous êtes garant(e) de la bonne confection des mets de la carte et de la qualité des préparations.
Vos missions seront les suivantes, dans le respect des normes d'hygiène en vigueur :
- Épauler le Chef Exécutif dans le management des équipes, dans l’approvisionnement en marchandises et dans l’élaboration des plats;
- Participer à l’élaboration des fiches techniques;
- Participer, avec le Chef Exécutif au choix des fournisseurs, à la réception et au contrôle des approvisionnements et des stocks, dans le respect des normes d'hygiène en vigueur;
- Assurer la qualité de la production et le bon déroulement du service;
- Assurer les préparations et l’envoi des plats, dans le respect des recettes;
- Contrôler l’organisation, la répartition des tâches conformément aux procédures internes et à la réglementation en vigueur;
- Contrôler les installations et la propreté de son lieu et de ses outils de travail;
- Contrôler et / ou effectuer le dressage des préparations;
- Etre un appui technique en cas de difficulté.
Vous avez une solide formation en Cuisine avec une expérience sur un poste similaire.
Créatif(ve), avec le souci du détail et un esprit d’équipe, vous avez également le sens du service.
