Pullman Quay Grand Sydney Harbour is delighted to announce the opening of Flaminia, our new signature restaurant overlooking Circular Quay. Created in collaboration with the renowned Pilu restaurant, Flaminia will showcase refined Italian cuisine paired with an elevated beverage program celebrating regional authenticity, craftsmanship, and sophistication.
We are seeking an experienced and passionate Sommelier to join our opening team. In this pivotal role, you’ll curate and present an exceptional wine offering that complements Flaminia’s Italian-inspired menu, guide guests through thoughtful pairings, and work closely with the restaurant team to deliver a world-class dining experience.
What you’ll bring
- Proven experience as a Sommelier or in a similar wine-focused role within premium dining
- Deep knowledge of Italian and Australian wines, with strong tasting and pairing expertise
- A passion for guest engagement, storytelling, and service excellence
- WSET or equivalent wine certification (preferred)
- A collaborative spirit and the desire to shape the wine culture of a brand-new venue
