L’hôtel Ibis Paris Porte d'Italie, situé à Gentilly (94), au pied du 13ème arrondissement de Paris, est un établissement de 283 chambres doté d’un espace dynamique incluant un restaurant, un bar, un espace de travail et des salles de séminaire. Il se veut un lieu cosy et convivial, pensé pour que chaque moment passé soit des plus agréables.
Dans le cadre du renforcement de notre brigade, nous recherchons un(e) Second(e) de Cuisine H/F/X en CDI à temps plein (39h/semaine) pour rejoindre notre équipe cuisine au sein de notre établissement hôtelier.
Véritable pilier de la brigade, vous êtes un(e) professionnel(le) confirmé(e), animé(e) par l’exigence du goût, le sens de l’organisation et le leadership terrain.
VOTRE MISSION
Sous la responsabilité du Responsable Restauration, le/la Second(e) de Cuisine est un relais essentiel du management en cuisine. Vous supervisez la production, coordonnez les équipes et garantissez la qualité, la régularité et la performance du service.
VOS TACHES QUOTIDIENNES
Production & excellence culinaire
- Superviser et contrôler la production des plats (qualité, présentation, températures).
- Garantir l’application des fiches techniques et des standards de la marque.
- Intervenir sur les préparations techniques ou à forte valeur ajoutée.
- Participer à la création et à l’évolution des cartes et fiches techniques.
Organisation & management
- Organiser et coordonner le travail de l'équipe.
- Encadrer, former et accompagner les commis, apprentis et stagiaires.
- Être un soutien opérationnel du Responsable Restauration.
Gestion & performance
- Participer à la gestion des stocks, commandes et contrôles des livraisons.
- Contribuer à l’optimisation des coûts matières et à la réduction des pertes.
- Veiller au respect des ratios et objectifs économiques du service.
Relation client & image de l’établissement
- Garantir la satisfaction client par une production régulière et qualitative.
- Intervenir ponctuellement en production visible ou lors d’événements.
- Incarner les valeurs de la marque et l’esprit Heartist®.
Hygiène, sécurité & environnement
- Garantir l’application des normes HACCP.
- Veiller à la propreté, au rangement et à la sécurité des espaces de travail.
- Appliquer et faire appliquer les procédures sécurité et environnement (Planet 21).
- Formation en cuisine (CAP/BEP minimum).
- Solides compétences techniques et organisationnelles.
- Leadership naturel, sens des responsabilités.
- Capacité à travailler sous pression et à fédérer une équipe.
- Rigueur, exemplarité et esprit d’équipe.
- CDI à temps plein (39h/semaine).
- Statut Agent de Maîtrise.
- Mutuelle et plan d’épargne salariale.
- 13ème mois.
