Luura begins its journey in Paros with two distinct yet connected expressions.
Luura Paros Cliff, opening May 2026, features 39 thoughtfully designed rooms set above the sea.
One year later, Luura Paros Sand follows with 49 additional rooms and a collection of vibrant food and social spaces that capture another rhythm of the island.
Your Role in the Story
As the Restaurant Manager at Mimi Kakushi of LUURA, you will oversee all aspects of the restaurant’s operations, ensuring that every service, experience, and interaction reflects the avant-garde, Japanese-inspired concept of the outlet while upholding the high standards of RIKAS. You are responsible for delivering a seamless, elevated guest journey—from greeting to farewell—combining creativity, precision, and operational excellence.
You will lead with a hands-on, visible presence on the floor, setting benchmarks for service, professionalism, and guest engagement. Your expertise will ensure smooth front-of-house and back-of-house coordination, drive team performance, support staff development, and deliver commercial results. You will safeguard the restaurant’s unique identity while embedding brand's values, operational standards, and culture throughout the team.
Key Responsibilities
- Oversee all daily operations at Mimi Kakushi, ensuring smooth service flow, operational efficiency, and memorable guest experiences.
- Uphold and communicate the restaurant’s Japanese-inspired, avant-garde philosophy, ensuring the concept remains consistent in every aspect of service and presentation.
- Lead, inspire, and manage all restaurant staff, including hiring, onboarding, scheduling, training, performance evaluations, and continuous development.
- Develop and maintain SOPs, operational manuals, and training materials tailored to Mimi Kakushi’s unique service style and culinary concept.
- Conduct pre-shift line-ups, ongoing coaching, and training sessions to ensure staff deliver consistently high standards.
- Be present on the floor throughout service, actively coaching, monitoring guest interactions, and personally assisting with VIP or special requests.
- Handle guest feedback and complaints promptly and professionally, ensuring resolution and maintaining the brand’s reputation.
- Collaborate closely with the F&B Manager, Chef, and other departments to ensure seamless coordination between kitchen, service, and support functions.
- Manage inventory, stock, and ordering processes for the restaurant, ensuring operational readiness and availability of specialty ingredients, sake, and beverages.
- Monitor and control budgets, P&L, and operational costs while maintaining service quality and guest satisfaction.
- Oversee the ambiance, presentation, music, lighting, and decor, ensuring it aligns with Mimi Kakushi’s avant-garde Japanese aesthetic.
- Support the kitchen team during service when necessary to ensure smooth coordination and service flow.
- Plan and execute special events, seasonal menus, and unique guest experiences that reinforce the restaurant’s brand identity.
- Analyze guest feedback, operational data, and market trends to drive continuous improvement, innovation, and elevated dining experiences.
- Utilize HR and operational systems for staff scheduling, performance tracking, payroll, and compliance reporting.
- Foster a motivated, professional, and culturally aligned team, ensuring high staff engagement, retention, and talent development.
- Lead by example, demonstrating professionalism, precision, and dedication to Mimi Kakushi’s unique service culture.
- Adapt standards and ways of working as per Rikas direction and standards.
Who We’re Looking For
- Minimum of 5–7 years’ experience in upscale F&B or restaurant management, preferably within luxury or lifestyle properties.
- Proven experience managing multi-outlet operations and leading diverse teams.
- Pre-opening experience at a Greek island will be considered a plus.
- Strong knowledge of restaurant operations, guest service standards, and luxury hospitality trends.
- Excellent leadership, coaching, and team development skills, with the ability to motivate and retain talent.
- Experience with budgeting, inventory management, and P&L oversight.
- Exceptional problem-solving and decision-making abilities, especially in high-pressure situations.
- Proficient in operational software, POS systems, and scheduling tools.
- Fluent in English; additional languages are a plus.
- Strong communication, interpersonal, and organizational skills.
- Deep understanding of health, safety, and hygiene regulations.
- Eligible to work in (EU) countries.
- High standards of personal presentation and professionalism.
- Naturally warm, approachable, and attentive to guest needs, leading by example on the floor.
