Job Description

We are seeking a talented and experienced Sous Chef (Pizza) to join our culinary team for our Italian restaurant, Fi'lia at the first Morgans Originals hotel in India in Mumbai, Roswyn , A Morgans Originals. As the second-in-command in our kitchen, you will play a crucial role in maintaining our high standards of food quality and service excellence.

This role requires strong technical expertise in dough fermentation, baking techniques, and ingredient sourcing, combined with leadership and operational excellence. The Pizza Sous Chef ensures Filia’s philosophy of honesty, simplicity, and tradition is reflected in every pizza, while upholding Morgans Originals’ luxury lifestyle standards.

Culinary Execution

  • Assist the Chef de Cuisine in developing and executing pizza menus, dough recipes, and daily specials.
  • Ensure consistency in dough preparation, fermentation, toppings, baking, and presentation.
  • Supervise pizza production to maintain authentic Italian techniques and Filia standards.
  • Monitor oven performance and baking processes to ensure optimal quality and timing.

Team Leadership

  •    Lead, train, and motivate pizza chefs and commis within the pizza section.
  •   Provide hands-on coaching on dough handling, shaping, topping balance, and baking     techniques.
  •   Act as the section leader and point of contact in the absence of the Chef de Cuisine.
  • Operational Support
  •  Oversee daily pizza section operations, ensuring efficiency during prep and service.
  • Control food costs, minimize waste, and support profitability targets.

 

Quality & Safety

  •  Uphold hygiene, sanitation, and food safety standards at all times.
  •  Ensure proper handling and storage of dough, cheeses, cured meats, and fresh produce.
  •  Follow and enforce standard operating procedures (SOPs) for the pizza section.

Guest Experience

  • Collaborate with front-of-house teams to ensure seamless service and guest satisfaction.

 

  • Support the creation of memorable dining experiences aligned with Filia’s warm, family-style atmosphere and Morgans Originals’ luxury lifestyle positioning

Qualifications

  • Proven experience as a Pizza Chef, Pizza Sous Chef, or Senior Chef de Partie (Pizza) in Italian restaurants, preferably within luxury hotels or lifestyle establishments.
  • Strong expertise in pizza dough fermentation, baking methods, and Italian pizza traditions.
  • Culinary degree or equivalent professional training preferred.
  • Good leadership, communication, and organizational skills.
  • Ability to perform under pressure in a fast-paced kitchen environment.
  • Passion for authentic Italian pizza-making and craftsmanship.
  • Strong attention to detail and consistency.
  • Creativity balanced with respect for tradition and simplicity.
  • Commitment to sustainability and high-quality ingredients.
