Job Description

The Head Sommelier is responsible to drive the development and execution of Mondrian Hotel's beverage strategy, with a focus on elevating the guest experience through a carefully curated wine portfolio for multiple venues. Oversee all aspects of financial management, including cost control (COGS, labour, comps, discounts, and wastage), to ensure that sales budgets and profit targets are consistently achieved and surpassed. Lead efforts to maximise revenue by enhancing spend per head and consistently exceeding monthly revenue goals.

Main Responsibilities

  • Create and maintain an innovative, comprehensive and sustainable Wine Program in line with Brand requirements and target audience. 
  • Develop partnership with suppliers and secure quality products. Source and procure wines from various regions, ensuring a well-balanced selection that caters to a range of preferences and budgets.  
  • Monitor industry trends and emerging wine regions to keep the wine program innovative and competitive.  
  • Analyse sales performance and Guest feedback to continuously refine and improve the wine selection and service. 
  • Lead and inspire the front-of-house team with ongoing training sessions on wine knowledge, service standards, and the art of upselling. Foster a culture of continuous learning and passion for wine within the team.
  • Monitor wine program performance through sales analysis, cost control, and inventory management, ensuring alignment with financial targets and goals. 
  • Utilise financial insights to make data-driven decisions that optimise pricing, inventory turnover, and overall program efficiency.  
  • Proactively manage Cost of Goods Sold (COGS) by selecting wines that offer the best quality-to-cost ratio, minimising waste through effective inventory control, and adjusting purchasing strategies to respond to market trends and cost fluctuations. 
  • Continually conduct Menu Engineering to ensure the List Unit Costs (LUC) align with forecasted profitability, adjusting offerings as necessary to meet financial objectives. 

Qualifications

  • Proven experience as a Sommelier, with at least 3 years in a leadership role in a luxury or fine dining environment. 
  • Certification from a recognised wine education institution (e.g., WSET, Court of Master Sommeliers) is highly preferred. 
  • Extensive knowledge of local and global wine regions, varietals, and current wine trends. 
  • Exceptional interpersonal and communication skills, with a flair for storytelling and guest engagement. 
  • Strong organisational skills with a keen attention to detail and an ability to manage multiple tasks in a dynamic environment. 
  • Experience using Restaurant Point of Sale Systems such as Symphony and Purchasing System such as Purchase Plus is advantageous.  
  • Queensland Responsible Service of Alcohol certification is required. 
  • Must have Full Australian Working Rights.
