Job Description

We invite you to join the world of luxury hospitality at Fairmont Southampton as our new Head Bartender. The Head Bartender reports to the Maitre’d or Assistant Maitre’d and is responsible for leading bar operations while delivering exceptional beverage experiences that reflect Fairmont luxury brand standards. This role combines advanced mixology expertise, leadership, operational oversight, and guest engagement. The Head Bartender sets the tone for service excellence at the bar, supports training and development of the bartending team, ensures compliance with health, safety, and Responsible Alcohol Service standards, and contributes to overall outlet performance and profitability.

What you will be doing

Beverage Service & Guest Experience

  • Lead by example in preparing and serving premium alcoholic and non-alcoholic beverages, including cocktails, wines, spirits, and specialty drinks, consistently meeting Fairmont and LQA standards.
  • Create engaging, personalized guest experiences that reflect luxury service expectations.
  • Ensure responsible alcohol service at all times, including exercising the right to refuse service in accordance with local laws and hotel policy.
  • Maintain expert knowledge of beverage menus, seasonal offerings, promotions, and garnishes; confidently recommend pairings and upsell premium selections.
  • Oversee bar service flow to ensure efficiency, consistency, and exceptional presentation during all service periods.
  • Address guest feedback promptly, professionally, and proactively to ensure satisfaction and loyalty.
  • Monitor guest allergies and dietary restrictions, ensuring safe and attentive service.

Bar Leadership & Team Development

  • Supervise, coach, and support bartenders and bar support staff during shifts.
  • Assist with onboarding, training, and ongoing development of the bartending team, reinforcing brand standards and service consistency.
  • Foster a positive, professional, and collaborative team environment.
  • Support scheduling, break coverage, and task delegation to maintain smooth operations.
  • Act as a role model for grooming, professionalism, and guest engagement.

Bar Operations & Inventory Control

  • Oversee bar setup, breakdown, cleanliness, and organization of front and back-of-house bar areas.
  • Monitor inventory levels, portion control, and waste to support cost-effective operations.
  • Assist with stock counts, ordering, and receiving of beverages and bar supplies.
  • Ensure proper storage, labeling, and rotation of products in line with HACCP standards.
  • Operate POS systems accurately and oversee proper cash and charge handling.
  • Ensure compliance with all health, safety, sanitation, and licensing requirements.
  • Handle bar equipment, glassware, and tools responsibly to minimize breakage and loss.

Teamwork & Operational Support

  • Collaborate closely with restaurant, kitchen, and beverage leadership teams to ensure seamless service delivery.
  • Maintain composure and leadership presence in a fast-paced, high-volume environment.
  • Be flexible and available to support operations across multiple food and beverage outlets as required.
  • Perform other duties as assigned to support overall Food & Beverage objectives.

Qualifications

Education

  • High school diploma or equivalent required.
  • Completion of a recognized bartending or mixology certification required; advanced mixology training preferred.

Experience

  • Minimum 3–5 years of bartending experience in a high-volume, luxury hotel or fine dining environment.
  • Previous lead or supervisory bartending experience strongly preferred.
  • Proven knowledge of cocktails, spirits, wines, and luxury beverage service standards.

Skills & Competencies

  • Advanced beverage and mixology knowledge with exceptional attention to quality and consistency.
  • Strong leadership, coaching, and interpersonal skills.
  • Excellent guest service and communication abilities.
  • Ability to multitask, prioritize, and lead under pressure.
  • Proficient in reading, writing, and speaking English.
  • Guest-focused mindset with a commitment to luxury service excellence.
  • Strong understanding of allergies, dietary restrictions, and responsible service practices.

Other Requirements

  • Ability to work flexible hours, including evenings, weekends, and public holidays.
  • Physical capability to stand and walk for extended periods, lift and carry up to 40–50 lbs, and work in a hot, fast-paced environment.
  • Manual dexterity for precise handling of bar equipment and glassware.
