Job Description

Pullman & Mercure Melbourne Albert Park are seeking a passionate, dedicated and experienced Executive Sous Chef to join our kitchen team! 

About the Role: 

  • Assisting the Executive Chef in daily kitchen operations and oversea food preparations in the à la carte and banqueting kitchens. 
  • Develop and test new recipes and seasonal menus that highlight flavour and creativity. 
  • Supervise, train and develop kitchen staff, fostering a collaborative, inclusive and high-energy working environment. 
  • Oversee and uphold food quality and hygiene standards in our kitchen operations, including banquets and à la carte restaurants.
  • Manage inventory, order supplies and minimise waste to optimise kitchen efficiency.
  • Facilitate and promote a collaborative interdepartmental work environment throughout the hotel. 

Qualifications

The ideal candidate will have a background in both à la carte and banqueting operations, a creative approach to menu development and a desire to achieve above the expected. 

About You: 

  • Ability to inspire, nurture and lead a creative diverse culinary workforce.
  • Previous experience with working with large fast-paced culinary operation. 
  • Previous banqueting experience (Preferred).
  • Strong understanding of seasonal menu creation and design. 
  • Strong knowledge of Food Safety (HACCP). 
  • Strong ability to effectively interact and communicate with staff, management and vendors. 
  • Proven ability to design and manage efficient staffing schedules, optimising team performance.
  • Demonstrated experience in efficiently managing stock levels and overseeing invoicing processes.
