Job Description

The Director of Food & Beverage reports to the Hotel Manager and is responsible for the overall strategy, execution, and performance of all Food & Beverage (F&B) operations within Fairmont Southampton, including multiple restaurants, destination bars, in-room dining banqueting, and event spaces. This role requires a visionary leader with strong commercial acumen, an eye for design and detail, and the ability to create memorable experiences that position Fairmont Southampton as the leading luxury lifestyle destination hotel.

What you will be doing:

Operational Excellence

  • Oversees daily Culinary/Food and Beverage operations, ensuring alignment with Fairmont standards.
  • Ensures consistent, high-quality food and beverage service across all outlets.
  • Collaborates with the Executive Chef(s) on menu design, purchasing, staffing, and food preparation.
  • Supports food and beverage portion control and waste reductions procedures.
  • Manages inventory budgets and orderings of uniforms and supplies within budget.

Financial & Business Planning

  • Manages the annual F&B operating budget, optimizing wages, productivity, and expenses.
  • Utilizes financial tools to monitor performance and support strategic planning goals.
  • Reviews staffing levels to meet service, operational and financial objectives.

People & Culture

  • Leads and support the F&B management team to drive performance and revenue.
  • Recruits, train and retrain a diverse, high-performing workforce focused on excellence and equity.
  • Champions Fairmont’s Service Culture, Heartist values, and diversity & inclusion initiatives within the F&B division.
  • Fosters a positive work environment that promotes colleague satisfaction and business success.

Guest Experience & Service Excellence

  • Implements and uphold guest service standards, continuously improving products, service and profitability to ensure guests satisfaction and help build customer loyalty.
  • Addresses guest complaints and ensures timely corrective actions.
  • Engages with guests, vendors, community partners and educational institutions.

Brand Representation & Marketing

  • Represents Fairmont Southampton positively on and off property.
  • Partners with Sales & Marketing to drive PR, promotions, and innovative concepts that attract guests creating a destination of choice to hotel and external guests.

Sustainability, Compliance & Safety

  • Champions sustainability initiatives in line with Accor’s Sustainability policy.
  • Ensures compliance with company SOPs, safety, sanitation and regulatory standards to ensure optimal levels of quality service and safety.
  • Trains staff in safety and loss prevention procedures to minimize risk and control costs.

Qualifications

What we’re looking for:

Experience

  • 5+ years in Food & Beverage management within the luxury hospitality sector
  • Experienced in budget management, payroll reporting, and financial oversight
  • Demonstrated success in a unionized environment

Education

  • Degree in Hospitality Management, Culinary Arts, or a related field, or equivalent relevant experience

Knowledge, Skills and Abilities

  • Proven ability to lead and coordinate multiple departments effectively
  • Extensive knowledge of Fine dining and Food & Wine
  • Strong leadership, team-building and coaching skills with a focus on staff development
  • Exceptional customer service and interpersonal skills
  • Creative and strategic thinker with a track record of implementing innovative F&B concepts
  • Skilled in problem-solving and maintaining service excellence under pressure
  • Proficient in Microsoft windows applications
  • Able to work independently and as part of a cohesive team
  • Highly reliable, responsible, and adaptable in fast-paced settings
