Job Description

  • Check daily Delivery Documents against Purchase Orders / Purchase Requisitions.
  • Ensure documented acknowledgement of receipt by Receiving / User Departments.
  • Unit cost to ensure as per contract / tender awarded.
  • Accurate arithmetic of Delivery Documents.
  • Discrepancies between Delivery Documents and Purchase Orders are documented on Delivery Document, including follow-up by Purchasing.
  • Accuracy of Receiving Records posted in Materials Control software.
  • Spot check quality and quantity of items received.
  • Check Store Requisition Forms & Inter Kitchen / Bar Transfers and ensure approved by authorized signatories.
  • Documented acknowledgement of receipt.
  • Accuracy of Issuance Records posted in Materials Control software.
  • Prepare Daily Food / Beverage Cost Reports.
  • Ensure FSMS compliance at Receiving and Store.
  • Verify accuracy and analyze Daily Food & Beverage Cost Reports, and investigate variances.
  • Do Market Survey with Purchasing and Kitchen, before evaluation of quotations obtained by Purchasing
  • Do Food Tests (Portion, Yield, Blind, Buffet, Butcher) and Beverage Spot Checks, and investigate variance.
  • Match Captain Orders with Guest Checks, and investigate variances.
  • Do month end inventory at Stores and Outlets. Reconcile to MC System, Micros POS and Sun System.
  • Assist Finance Manager in preparation of Monthly Closing and Reports.
  • Verify accuracy and analyze Monthly Food & Beverage Cost Reports, and investigate variances.
  • Prepare and analyze Cost Controllers Report, as per Accor guidelines.
  • Update information in MC System eg: new Inventory Codes, Inventory Par Levels, Recipe Costing.
  • Verify accuracy of Selling Prices in Point of Sales Systems.
  • Prepare and follow-up on Receiving / Store Management Reports

Qualifications

  • University graduate
  • Additional improvement programs in Finance is preferred
  • Knowledge in costing of food and beverage operation
  • Familiar with internal systems and procedures
  • Ability to coordinate with relevant department
  • At least 4 - 5 years’ experience in international class hotel in a similar capacity
  • Experience in Sun System, MC System, Micros POS Symphony is preferred
  • Excellent reading, writing and oral proficiency in English language
  • Proficient in MS Excel, Word, & PowerPoint
  • Past experience of working in the Maldives
