About Mercure Brisbane Spring Hill
The Mercure Brisbane Spring Hill is located on the central city fringe, just minutes from the CBD, Brisbane River, Suncorp Stadium and public transport. Overlooking the city skyline and Roma St Parklands, the Hotel features 179 spacious guest rooms with generous open-aired balconies, modern amenities, an outdoor swimming pool, fitness room, and an alfresco-style restaurant and bar.
We are seeking a Commis Chef to join our dynamic Kitchen team and contribute to our culinary success! In this critical role, you will assist our chefs in the preparation and cooking of meals across various outlets, from breakfast service to dinner operations. Your responsibilities will include managing mise en place, monitoring stock levels, and ensuring all food is stored and managed to the highest health and hygiene standards.
- Efficiently manage your assigned section, maintaining stock rotation protocols
- Ensure every dish meets the hotel's quality standards
- Assist in the preparation and cooking of meals for all meal services
- Maintain a clean and organised work environment at all times
- Adhere strictly to all health and safety regulations
- Collaborate effectively with other kitchen staff to ensure smooth operations
- Continuously develop culinary skills and knowledge
- Report any issues or concerns to senior kitchen staff promptly
- Participate in regular inventory checks and stock management
- Demonstrate a commitment to professional growth and culinary excellence
The successful candidate will have the following:
- Trade qualifications in Cookery
- Previous experience in the hotel industry (preferred)
- Knowledge of food safety requirements
- Service oriented with an eye for detail
- Time management skills with the ability to multitask
- Good interpersonal skills and the ability to communicate with all levels of team members
- Flexible availability to work a rotating roster, including weekends and public holidays
