- Assign, supervise, and monitor all stewarding staff and contracted cleaners, ensuring tasks are performed to standard.
- Prepare and maintain staff rosters, ensuring adequate coverage for all shifts, while controlling overtime and managing leave schedules.
- Maintain par levels for operating equipment (glassware, chinaware, silverware) in collaboration with Restaurant Managers.
- Monitor breakages and report discrepancies or losses with costed breakage reports.
- Supervise cleanliness and sanitation of all kitchen and back-of-house areas, ensuring compliance with health and safety codes.
- Coordinate with Engineering to ensure preventive maintenance and repairs of dishwashers and other stewarding equipment.
- Organize regular deep-cleaning schedules for all kitchen outlets and stores.
- Ensure proper waste segregation, disposal, and cleanliness of garbage rooms in line with local regulations and sustainability practices.
- Liaise with vendors and external contractors for pest control, deep cleaning, chemical supplies, and waste disposal.
- Prepare and monitor department-related budgets including cleaning supplies, manpower, and equipment maintenance.
- Prepare monthly reports detailing department performance, challenges, and improvement plans.
- Ensure team compliance with hygiene and safety protocols, including PPE usage, chemical handling, and equipment operations.
- Be fully conversant with fire, life, and safety procedures, and support emergency preparedness training.
- Deliver structured training programs for stewarding team and casual staff to maintain standards and drive continuous improvement.
- Minimum of Secondary/High School education.
- At least 2–3 years in a similar chief stewarding or senior chief steward role in a hospitality environment (five star or four-star property).
- Strong understanding of HACCP, food safety regulations, and sanitation practices.
- Good reading, writing and oral proficiency in English language
