- Préparer tous les types de sushis (nigiri, maki, sashimi, temaki…) dans le respect des recettes et des standards Fairmont.
- Contrôler la qualité, la fraîcheur et la coupe des denrées adaptés comme les poissons et fruits de mer.
- Assurer la cuisson et l’assaisonnement du riz à sushi avec précision.
- Mettre en place son poste avant chaque service et assurer sa propreté constante.
- S’assurer que tous les ingrédients nécessaires sont disponibles et prêts pour un service fluide.
- Encadrer les commis et demi-chefs affectés à la section sushi.
- Transmettre les techniques et bonnes pratiques en matière de cuisine asiatique.
- Appliquer strictement les normes HACCP (hygiène, conservation, traçabilité, température, nettoyage).
- Vérifier les DLC et le bon étiquetage des produits.
- Effectuer l’inventaire de la section sushi et transmettre les besoins au Sous-Chef.
- Réduire le gaspillage et optimiser l’utilisation des matières premières.
- Participer à la création de nouvelles recettes de sushis et spécialités japonaises.
- Apporter des suggestions d’amélioration pour les menus et les présentations.
- Travailler en coordination avec les équipes de salle pour garantir un service fluide.
- Assurer une présentation soignée et esthétique conforme aux attentes de la clientèle luxe.
Diplôme en arts culinaires ou formation équivalente, avec spécialisation en cuisine asiatique ou sushi (souhaitée).
Expérience minimum de 3 ans dans un poste similaire en restauration haut de gamme ou en hôtellerie de luxe.
Excellente maîtrise des techniques de préparation du sushi, y compris le choix, la découpe et la conservation du poisson cru.
Bonne connaissance des normes HACCP et des règles strictes d’hygiène et de sécurité alimentaire.
Créativité et souci du détail, avec un sens développé de la présentation et de la qualité visuelle des plats.
Esprit d’équipe, rigueur et capacité à travailler sous pression, en maintenant un service fluide et organisé.
