Avec une vue plongeante sur la Seine, le Benkay honore la gastronomie Japonaise avec art, dans une ambiance bois-wengé rappelant l’intérieur des maisons traditionnelles. On opte au choix pour le teppanyaki et sa cuisine sur plaque chauffante ou le washoku qui vous permettra de découvrir les mets traditionnels nippon dans une ambiance discrète et relaxante.
Le restaurant est rattaché à l’hôtel Novotel Paris Centre Tour Eiffel.
Vos principales missions :
Qualité
- S’assurer de la fraîcheur des produits ainsi que de la bonne qualité de préparation et de présentation des plats
- Veiller à la satisfaction clients
- Pilote l’élaboration des menus et cartes de la cuisine et est force de proposition
- Est responsable d'un secteur de la cuisine et en assure l'organisation, la coordination et le service.
Production culinaire
- Organiser et gérer l’ensemble du processus de production culinaire
- Assurer un service de haute qualité face aux clients
- Contrôle de la bonne utilisation des équipements et des techniques de TeppanYaki
- Organisation des postes de travail
- Garantir la bonne application des normes d’hygiène et de sécurité dans la cuisine
Approvisionnement / Gestion des stocks
- Sélectionner et garantir la qualité des produits utilisés
- Gérer l’ensemble des dépenses liées au bon fonctionnement de la cuisine
- Gestion des coûts nourriture et suivi des ratios
Votre profil :
- Très bonne connaissance de la culture japonaise
- Expérience de 2 ans dans un restaurant ayant une cuisine Japonaise
- Une expérience en cuisine gastronomique est demandée
Langues : Français et Anglais, langue Japonaise est un plus
Qualités : Leader reconnu, Autonomie, Créatif, Rigueur & Méthode, Excellent gestionnaire, Pédagogue, Goût du contact avec les clients, Excellente présentation
