- Coordinate and oversee daily operations across multiple kitchen sections.
- Ensure food quality, consistency, and timely preparation according to established recipes and standards.
- Adapt and develop recipes to meet operational requirements and guest preferences.
- Maintain proper storage, sanitation, and upkeep of food, equipment, and supplies.
- Monitor inventory levels and ensure adequate stock for smooth kitchen operations.
- Recommend menu enhancements, process improvements, and cost-saving initiatives to the Executive Chef or Executive Sous Chef.
- Support the maintenance and sanitation of all kitchen equipment and facilities.
- Manage stock control to minimize waste, losses, and breakage.
- Ensure strict compliance with Food & Beverage policies, hygiene, and food safety standards.

- 在庫管理を徹底し、廃棄・紛失・破損を最小限に抑える。
- ホテルのF&B(料飲)ポリシー、衛生基準および食品安全基準を遵守し、高い衛生水準を維持する。
- Native-level Japanese proficiency in both written and spoken communication; English ability is an advantage but not required.
- Strong knowledge of Japanese food safety and hygiene laws, including regulations on food poisoning and allergy prevention.
- Familiarity with local and national food production standards and related regulatory requirements.
- Broad knowledge of international and Asian cuisines, with a focus on innovation and creativity.
- Proven leadership capabilities and excellent communication skills.
- Ability to plan, forecast, and manage operations effectively.
