Pullman & Mercure King George Square is a vibrant 438 room twin towered hotel which acts as a sanctuary for leisure and business travelers. Located opposite King George Square, City Hall and ideally situated in the heart of Brisbane CBD the hotel has some of the largest conference spaces in Brisbane incorporating 2 ballrooms. The hotel also features the amazing and extremely popular venues of Goldfinch Restaurant and Street Cafe, as well as Sixteen Antlers Rooftop Bar and soon to open KG Sports Bar.

Job Description
We are currently seeking full time and part time skilled and passionate Chef de Partie to join our culinary team at Pullman and Mercure Brisbane. As an experienced member of the kitchen team, you will play a significant role in supervising operational aspects of the kitchen and ensure food hygiene and safety procedures are followed.
- Manage and coordinate activities within your assigned kitchen section
- Ensure efficient workflow and seamless coordination with other kitchen areas
- Maintain impeccable hygiene and kitchen standards in line with HACCP requirements
- Prepare and cook dishes according to our menu specifications and quality standards
- Train and mentor junior kitchen staff, including apprentices and commis chefs
- Assist in menu development and implementation of new food concepts
- Collaborate with the sous chef and executive chef to maintain kitchen efficiency
- Monitor and control food waste, stock levels, and kitchen resources
- Adapt quickly to changing priorities during busy service periods.
Qualifications
- Previous experience in a similar role and environment.
- Trade qualifications in commercial cookery.
- Excellent technical knowledge with experience in all cooking techniques and styles.
- Excellent organisational skills & grooming standards.
- Genuine commitment to guest service, attention to detail and passionate about the Industry
- Passionate about providing exceptional product and committed to undertake growth and development within the Pullman brand
