Chef de Partie (H/F) CDD SAISONNIER

Le Grand Hôtel Roi René MGallery**** Aix-en-Provence, recherche son/sa prochain/e Chef de partie H/F en CDD pour la saison d’avril à Octobre à temps plein (169h/mensuelles).
- Salaire : à partir de 13.04 euros brut de l'heure + indemnités compensatrices de nourriture
- Pas de coupure (alternance entre vacation matin et soir)
- 2 jours de repos consécutifs
Votre mission
Vous contribuez au bon déroulement du service et de la qualité de la production en gérant votre partie (divers postes : chaud, froid, entrée, desserts). Vous assurez de façon autonome la production des plats conformément aux fiches techniques et en minimisant les pertes.
-Attention particulière portée à la présentation, à la qualité et à la bonne température des plats
-Maitriser tous les types de cuisson de tous les aliments
- Mise en place du service et gestion des mises en place
- Gérer le contenu des réfrigérateurs ainsi que de la propreté de ces derniers
- Respecter les consignes d’utilisation et de sécurité du matériel mis à sa disposition
-Manager les commis, apprentis qu'il forme et en est responsable
- Implication dans l’atteinte des objectifs
- Stockage et vérification des livraisons
- Respect des normes HACCP et attention portée à la sécurité alimentaire
- Nettoyage et rangement dans le respect des normes sanitaires
- Connait et applique les règles de sécurité de l’hôtel et la conduite à tenir en cas d’évacuation incendie
