Job Description

Position Summary

Rixos Phu Quoc Viet Nam is seeking an experienced and commercially driven Beverage Manager to lead all beverage and bar operations across the resort. Reporting directly to the Director of Food & Beverage, this role is responsible for operational excellence, beverage innovation, financial performance, guest satisfaction, and team leadership in line with Rixos’ luxury all-inclusive standards.

The Beverage Manager plays a key role in translating F&B strategy into daily execution, ensuring consistency, creativity, compliance, and profitability across all bars and beverage concepts.

Key Responsibilities

Beverage & Bar Operations

  • Oversee the daily operations of all bars, lounges, and beverage points across the resort.
  • Ensure all beverage outlets operate efficiently, consistently, and in accordance with Rixos brand standards and concept statements.
  • Maintain high visibility during peak operating hours to ensure service excellence and guest satisfaction.

Leadership & Team Management

  • Lead, coach, and develop Bar Managers, bartenders, mixologists, and baristas.
  • Assign responsibilities, monitor performance, and conduct regular performance reviews.
  • Foster a positive, professional, and guest-focused work culture.
  • Identify and develop high-potential talents for future growth within the Rixos group.

Beverage Program & Innovation

  • Develop, implement, and continuously improve beverage menus, signature cocktails, wine lists, and promotional offerings.
  • Stay up to date with market trends, guest preferences, and competitor benchmarking.
  • Collaborate closely with Culinary and F&B leadership on menu alignment and guest experience enhancement.

Financial & Cost Control

  • Support the Director of Food & Beverage in preparing the Annual Operating Budget and Business Plan.
  • Ensure achievement of monthly and annual beverage revenue targets.
  • Control beverage costs through effective inventory management, par stock control, waste reduction, and accurate forecasting.
  • Monitor operating expenses and recommend corrective actions when required.

Guest Experience & Service Excellence

  • Handle guest feedback, requests, and complaints related to beverage and bar service in a professional and timely manner.
  • Build strong guest relationships and contribute to guest history and loyalty initiatives.
  • Ensure cashiering procedures and internal controls are strictly followed.

Compliance, Hygiene & Safety

  • Ensure full compliance with HACCP standards, food safety regulations, and local licensing laws.
  • Adhere to Rixos ISO Integrated Management Systems, including Quality, Environment, Health & Safety, Food Safety, and Guest Complaint Management (ISO 9001, 14001, 22000, 10002).
  • Work closely with Hygiene, Stewarding, and Engineering teams to ensure cleanliness, safety, and maintenance standards.

Planning, Reporting & Administration

  • Prepare and submit operational reports, forecasts, training reports, and performance reviews to the F&B Director.
  • Maintain and update departmental SOPs, operations manuals, opening & closing procedures, and pricing structures.
  • Plan staff rosters and schedules in line with business volumes and submit for approval.
  • Conduct regular inventories of operating equipment and beverage stock.

Marketing, Sales & Promotions

  • Contribute to the Annual Marketing Plan and beverage-focused promotional activities.
  • Support advertising initiatives and collaborate with Sales, Marketing, and Concierge teams to drive outlet visibility and revenue.
  • Ensure beverage concepts meet market demand and brand positioning.

Qualifications

  • Diploma or Bachelor’s degree in Hospitality Management or related field preferred.
  • Minimum 7–8 years of experience in beverage and bar operations within 4–5 star luxury hotels or resorts.
  • Proven experience managing multiple bar outlets and large beverage teams.
  • Strong knowledge of mixology, wines, spirits, bar operations, and service standards.
