Job Description
As Bar & Lounge Manager, you'll lead the day-to-day operations of Altus Rooftop Bar & Lounge, overseeing both our renowned bar service and signature High Tea experience. You'll inspire a passionate team, set the tone for exceptional guest service and help shape the continued success of one of Melbourne's most distinctive hospitality venues.

You'll have the autonomy to make your mark, contribute fresh ideas, develop your leadership capability and grow within Australia's largest hotel group, while being supported by an experienced Food & Beverage leadership team.
Key responsibilities
- Lead the daily operation of Altus Rooftop Bar & Lounge, ensuring seamless service across bar, lounge and High Tea experiences.
- Create memorable guest experiences through genuine hospitality and attention to detail.
- Lead, coach and develop a passionate team, creating a positive and engaging culture built on teamwork and excellence.
- Support the ongoing development of innovative beverage offerings, seasonal promotions and memorable guest experiences.
- Work closely with the Executive Chef and wider Food & Beverage leadership team to deliver exceptional food and beverage pairings.
- Maintain consistently high presentation and service standards that reflect the MGallery luxury brand.
- Oversee rostering, beverage stock, ordering and day-to-day operational requirements.
- Ensure compliance with RSA, food safety and hotel policies.
- Resolve guest feedback professionally, turning every interaction into an opportunity to exceed expectations.
Qualifications
We're looking for someone who is passionate about hospitality and ready to take the next step into venue leadership.
You'll bring:
- Previous leadership experience within a premium bar, restaurant, hotel or hospitality venue.
- A genuine passion for creating memorable guest experiences.
- Strong leadership skills with the ability to motivate, coach and develop a team.
- Excellent knowledge of cocktails, wine and premium beverage service.
- A hands-on leadership style and willingness to lead from the floor.
- Previous experience designing and evolving a market-relevant beverage offering, including cocktails, wine, beer and spirits.
- Excellent communication and interpersonal skills, with a calm, solutions-focused approach under pressure.
- Impeccable grooming and professional presentation.
- Competency with POS systems; Micros experience would be advantageous.
- Confidence working in a fast-paced environment while maintaining exceptional attention to detail.
- A collaborative approach and a desire to continually learn and grow.
- A current Victorian RSA certificate.
