Our esteemed hotel is centrally located in Cairns City. Our property features 324 elegantly appointed rooms, 18 versatile meeting spaces, Coco’s Kitchen and Bar, as well as in-room dining services. We’re now on the lookout for a passionate and experienced leader to step into the role of Assistant Food and Beverage Manager. In this key role, you’ll collaborate closely with the Food and Beverage Manager to oversee daily operations, inspire the team, and ensure every guest enjoys exceptional service delivered with consistent quality and care.


Job Description

As Assistant Food and Beverage Manager, you will oversee all food and beverage outlets, including Coco’s Kitchen and Bar, room service, and event spaces. Reporting directly to the Food and Beverage Manager, this pivotal leadership role demands a strategic mindset to manage daily operations, drive performance, and consistently deliver exceptional guest experiences across every outlet.

You will work closely with a skilled and motivated team, playing a vital role in driving results and supporting the ongoing growth and success of the business. If you’re a decisive, service-oriented leader with a passion for operational excellence, we’d love to hear from you.

Key Responsibilities:

  • Manage daily operations across all food and beverage outlets, maintaining high standards of service and operational efficiency
  • Lead, mentor, and develop the Food & Beverage team, fostering a culture of continuous improvement, training, and strong performance
  • Monitor financial performance by tracking revenue, controlling costs, and managing budgets to maximize profitability while minimizing waste
  • Collaborate with the Culinary team to optimize menu pricing, promotions, and offerings that reflect guest preferences and market trends
  • Partner with Sales & Marketing and Conference & Event teams to ensure flawless event execution and client satisfaction

  • Proven experience in Food and Beverage management, with a strong track record of leadership in a hotel restaurant environment.

  • In-depth knowledge of food safety standards and best practices.
  • Expertise in wine varietals, cocktails, craft beers, and spirits, with a refined palate and an eye for quality.
  • Strong awareness of current industry trends and the ability to adapt to emerging food and beverage innovations.
