Job Description

We are seeking a passionate and experienced Head Chef to lead our kitchen team at Sydney Olympic Park. This role is responsible for managing all culinary operations across multiple outlets, ensuring high-quality food, operational efficiency, and a positive team culture. The Head Chef will play a key role in menu planning, food cost control, kitchen staffing, and maintaining food safety standards. A strong leader and creative thinker, the Head Chef will inspire the team to deliver memorable dining experiences while aligning with Accor’s values and Heartist philosophy.

Key Responsibilities

  • Oversee all kitchen operations, ensuring consistent quality and presentation.

  • Design and cost seasonal menus, banquet offerings, and daily specials.

  • Lead, train, and develop a high-performing kitchen team.

  • Manage food and labour costs to meet budget and business targets.

  • Ensure compliance with WHS, HACCP, and hygiene regulations.

  • Conduct regular stocktakes and maintain inventory levels.

  • Foster a collaborative and respectful work environment.

  • Partner with internal departments and external suppliers.

  • Promote sustainability practices in line with Accor’s Net Zero goals.

  • Act as a brand ambassador, supporting Accor’s values and service culture.


Qualifications

  • Certificate III in Commercial Cookery (minimum requirement).

  • Proven experience as a Head Chef in a hotel or multi-outlet venue.

  • Strong leadership skills with the ability to motivate and mentor teams.

  • Solid understanding of menu design, food costing, and financial controls.

  • Excellent knowledge of food safety standards and WHS practices.

  • Creative and adaptable with a strong focus on quality and guest satisfaction.

  • Professional communication and time management skills.

  • Passion for sustainability and innovation in the kitchen.
