SECOND DE CUISINE
Missions Générale
- Manage et motive l'équipe de cuisine pour offrir une prestation de qualité au client ;
- Veille au respect des règles d'hygiène, de sécurité et de qualité alimentaire
- Participe à la mise en place des préparations en fonction des prévisions d'activité et de consommation ;
- Anticipe les fabrications ;
- Prépare, confectionne et dresse les plats, hors d’œuvres et desserts ;
- Réalise une cuisine gastronomique, traditionnelle et industrielle ;
- Vérifie les préparations et les plats (goût, qualité, présentation, …) ;
- Veille au bon déroulement des préparations culinaires pendant le service ;
- Fait preuve de créativité ;
- Est apte à assurer le service de production de tous les postes ;
- Veille à la qualité des produits présentés à la clientèle ainsi que celle des plats chauds, ce qui impose des relations professionnelles et humaines avec le personnel de salle.
- Supervise et coordonne, avec le chef de cuisine les différents secteurs de la cuisine : production froide et chaude, plonge
- Participe à l'élaboration des cartes et des menus en collaboration avec le chef de cuisine ;
- Veille ainsi au respect des délais d'attente maximum préconisés par la marque, à la présentation des mets, à la qualité et à la bonne température des plats
Gestion
- Organise rationnellement son travail ;
- Participe à la commande des marchandises en respectant la politique d'achat du groupe ;
- Gère les stocks et les approvisionnements ;
- Participe aux inventaires et explique les écarts de consommation ;
- Vérifier que les denrées sont stockées dans les conditions d’hygiène requises ;
- Procède à un contrôle quantitatif et qualitatif des produits en concordance avec les bons de commande et de livraison ;
- Signe les bordereaux de réception après contrôle des colis. En cas de détail dans les colis, ne pas oublier de noter sur les bordereaux "sous réserve de déballage » ;
- Procède au retour éventuel des marchandises jusqu'à l'élaboration du bon d'avoir.
- Signale immédiatement au responsable hiérarchique ou à la Direction toute anomalie ;
Hygiène /Sécurité des personnes / Environnement
- Applique strictement et veille au respect des règles d’hygiène (méthode HACCP, DLC) et de sécurité ;
- Participe à l'élaboration des plannings de travail en cohérence avec la prévision d'activité ;
- Applique la législation du travail ;
