Located in the heart of Cairns City, our hotel features 324 elegant guest rooms, 18 dynamic conference and event spaces, Coco’s Kitchen + Bar, and a full in-room dining experience. We're now seeking a passionate and experienced Food and Beverage Manager to lead our vibrant F&B operations.

Job Description

We’re on the hunt for a driven, hands-on Food & Beverage Manager who’s passionate about curating unforgettable guest experiences and leading high-performing teams. This is your chance to take the helm of Coco’s Kitchen + Bar—our signature dining destination known for its dedication to culinary excellence and stylish ambiance—as well as our multi-faceted conferencing and events operation.

You'll oversee every aspect of the food and beverage offering, from restaurant and bar service to room service and event delivery. With a strong focus on team empowerment, service consistency, and strategic planning, you’ll elevate guest satisfaction while meeting performance goals across revenue, quality, and experience.

In this role, you will:

  • Oversee Coco’s Kitchen + Bar and all F&B outlets including bar, in-room dining, and events
  • Lead, recruit, mentor, and inspire a passionate team committed to delivering standout guest experiences
  • Collaborate with the Executive Chef to ensure seamless and high-quality food service
  • Drive profitability through smart cost control, forecasting, and operational efficiency
  • Uphold the ambiance, cleanliness, and presentation of all outlets to the highest standards
  • Work cross-functionally with Sales and Conference teams to deliver exceptional events
  • Set clear goals and performance expectations, providing ongoing coaching and development
  • Continuously monitor guest satisfaction, using insights to drive improvement and innovation

Qualifications

What We Are Looking For:

  • Extensive Food & Beverage leadership experience with a proven track record in similar roles
  • Strong knowledge of food safety, product quality, and the latest Food & Beverage trends
  • Exceptional ability to motivate, inspire, and lead diverse, high-performing teams
  • Excellent organisational skills with the confidence to multitask and perform under pressure
  • A genuine passion for quality, creativity, and delivering outstanding guest experiences
  • Collaborative management style with strong interpersonal and communication skills
  • Solid financial acumen including budget development, forecasting, and cost control
