Pullman & Mercure King George Square is a vibrant 438 room twin towered hotel which acts as a sanctuary for leisure and business travellers.  Located opposite King George Square, City Hall and ideally situated in the heart of Brisbane CBD the hotel has some of the largest conference spaces in Brisbane incorporating 2 ballrooms. The hotel also features the amazing and extremely popular venues of Goldfinch Restaurant and Street Cafe, & Sixteen Antlers Rooftop.

We are looking for someone who is passionate about all things food and loves tailoring amazing beverages to our guests and visitors. They must be open in being able to adapt their skills in Hotel Food and Beverage by creating memorable great experiences, by being a true Heartist. 

Reporting to the Director of Food & Beverage, the role will oversee the shift operations of the Goldfinch Restaurant & Street Café and In Room Dining. 

The ideal candidate will have experience in a similar leadership position, and a passion for people and service/experiences. They must be able to multitask at a high level whist developing individual team members and the team as a whole.  You will also have a hands-on management style and flexible work ethic. 


Job Description

  • Ensure efficient, friendly and professional food and beverage service is provided to all guests.  

  • Provide for guests and patrons an experience and environment they feel meets their expectations.  

  • Liaise with customers and Chef/kitchen brigade to ensure service times are adhered to.  

  • Ensure revenue for the shift is accounted for with cash/charge summary being completed to balance daily activities.  

  • Set up systems to protect and maintain control of service equipment, correctly recording breakages and carry our regular stock takes.  

  • Ensure all mis-en-place is completed prior to guests arriving.  

  • Ensure staff are competent in all service procedures and can maximize sales to guests.  

  • Staff skill testing, training and development to maintain a constant focus on providing an excellent guest experience  

  • Coordination of cleaning and maintenance of outlets, work areas, tableware, and utensils and other materials and equipment  

  • Handle any escalated guest complaints to a guest focussed solution.  

  • Be knowledgeable of and operate within appropriate outlet and hotel liquor licensing guidelines and House Management Policies.  


Qualifications

  • Flexibility to work various shifts including weekends, mornings, nights and public holidays  

  • Excellent communication skills  

  • Being a true hospitality professional dedicated to providing customer service excellence  

  • Responsible Service of Alcohol (RSA)  

  • Previous experience in a similar role in high volume 5 star venues, highly regarded
