Located in Melbourne’s vibrant inner-north, we are a leading conference venue and leisure destination offering contemporary accommodation, stylish dining, and versatile event spaces in the heart of Preston. With 383 guest rooms, 13 conference and event venues, and two on-site dining outlets, our property caters to both corporate and leisure clients.
Easily accessible via the 86 tram and Mernda train line—both within walking distance—and with over 400 on-site parking spaces, our property is ideally positioned. As Executive Chef, you will oversee all kitchen operations, ensuring exceptional food quality, consistency, and presentation while fostering a positive and productive team culture. You will lead the culinary vision, innovate menus, and work closely with senior leaders to deliver a seamless and memorable guest experience.
This role requires a balance of creativity, operational discipline, and strong leadership—perfect for a chef who thrives in a dynamic, fast-paced environment.
About the Role
- Oversee day-to-day kitchen operations including rostering, recruitment, training, and performance management.
- Lead, mentor, and develop a team of chefs and kitchen porters to deliver consistent, high-quality service.
- Create and innovate menus, plan dishes, and develop recipes.
- Manage food and labour costs, oversee budgeting, and maintain strong cost-control practices.
- Monitor stock levels, manage supplier relationships, and ensure accurate inventory control.
- Maintain and enforce high standards of food safety, hygiene, and workplace compliance.
- Drive efficiency and operational excellence while maintaining creativity, flavour, and presentation standards.
- Work closely with the General Manager and all teams to ensure seamless service and exceptional guest satisfaction.
- Previous similar experience in a high-energy, fast-paced kitchen environment.
- Strong leadership skills with the ability to inspire, mentor, and guide culinary teams.
- Extensive culinary expertise, creativity, and a passion for delivering bold flavours and beautifully plated dishes.
- Solid understanding of budgeting, cost control, labour planning, and financial management.
- Excellent communication, time management, and organisational skills.
- Proven knowledge of food safety regulations, HACCP, and health compliance standards.
- Food Safety Supervisor Certification.
