La Coordinatrice Culinaire assiste le Chef Exécutif et le sus chef exécutif dans l'organisation quotidienne du département culinaire. Elle assure la coordination administrative et opérationnelle entre les équipes, participe au suivi des standards, veille à la bonne communication interne et au respect des procédures.
1. Support opérationnel :
Être le relais entre la cuisine, les points de vente et les autres départements (Service, achats, finance, T&C…).
Participer à la préparation des événements spéciaux (buffets, banquets, promotions culinaires…).
Assurer la bonne diffusion des plannings, des menus et des fiches techniques.
2. Coordination administrative :
Gérer les documents liés aux recettes, menus, coûts et inventaires.
Suivre les besoins en personnel et appuyer les processus de recrutement et d'intégration.
Tenir à jour les tableaux de bord du département (présence, performance, formations…).
3. Qualité & Hygiène :
Participer à la mise en œuvre des standards HACCP et à leur suivi quotidien.
Assurer la bonne tenue des documents de traçabilité et d'hygiène.
Appuyer la préparation aux audits internes et externes.
4. Communication & Reporting :
Préparer les réunions du département culinaire et diffuser les comptes rendus.
Recueillir les besoins en matériel ou en formation des équipes et assurer leur suivi.
Suivre les retours clients liés à l’offre culinaire et les partager avec les chefs.
