Mission(s) générale(s) - Raison d'être :
- Assure la vente, l'organisation et la qualité des services et prestations proposées au client du banquet.
- Anime son point de vente.
- Veille au bon état des salles séminaires et du matériel.
- Communication constante avec l’équipe terrain, la cuisine, le restaurant et le service commercial.
Principales Responsabilités :
- Veille à ce que son département offre les meilleures prestations, tant du point de vue de la qualité des mets proposés que du service au client.
- S'assure du bon fonctionnement des différents secteurs placés sous sa responsabilité.
- En l’absence d’un supérieur hiérarchique, encadre les intérimaires du banquet.
- Veille au bon fonctionnement du matériel technique et à la connaissance de son utilisation.
- Veille à la bonne mise en place et à la propreté des salles.
- Selon l’activité, peut assurer le service (mise en place, dressage, service, débarrassage) auprès du client sur les points de vente telles que les restaurants, le service petit-déjeuner en salle ou en chambre ou cafèterie, service en chambre (room service) et bar.
Activités : Tâches Commerciales
- Connaît les prestations proposées par l'hôtel, en informe le client et l’encourage à consommer.
- Est à l'écoute du client et lui apporte une réponse adaptée à sa demande.
- Etablit d'excellentes relations avec le client.
- Optimise les résultats (nombre de couverts et prix moyen) sur son point de vente.
- S'informe régulièrement de ce qui se passe chez ses concurrents.
Activités : Gestion
- Contrôle la facturation journalière, les encaissements, les rapports d'activités.
- Contrôle les "offerts" sur son point de vente en l’absence d’un supérieur hiérarchique.
- Gère ses stocks.
- Etablit les inventaires (alimentaire et matériel).
- Contrôle les boissons, leur bonne facturation.
Activités : Production
- Accueille le client, encadre le client et s’occupe du client du début jusqu’à la fin de sa manifestation.
- Assure la mise en place de son point de vente et veille à y faire régner une ambiance chaleureuse et sympathique.
- Organise le travail et s'assure de la bonne transmission des informations à son équipe et à l’équipe commerciale.
- Assure la bonne coordination du travail avec la cuisine.
- Contrôle la qualité et la décoration des mets servis.
- Contrôle ses feuilles de fonction et met à jour les changements éventuels.
- Transmet des retours réguliers sur le déroulement des évènements à ses collaborateurs et au service commercial (plaintes, problèmes rencontrés, litige client, retours positifs/négatifs).
- Participe activement à la fidélisation du client.
- S'assure que les règles d'hygiène et de sécurité sont respectées dans son département, notamment les normes HACCP.

- Organise et participe à l'organisation du travail des apprentis et des stagiaires en l’absence d’un supérieur hiérarchique.
- Vérifie le bon état et la propreté des uniformes des intérimaires en l’absence d’un supérieur hiérarchique.
