Our prestigious hotel is centrally located in Cairns City, offering 324 elegantly appointed rooms, 18 versatile meeting spaces, and Coco’s Kitchen and Bar, where the menu highlights local fish, seafood, and premium regional produce. Join our kitchen team and share your culinary passion to create unforgettable dining experiences for our guests.
We are looking for an experienced Chef de Partie with a strong a la carte background to join our vibrant kitchen team. In this role, you will create high-quality dishes, contribute to menu development, and manage kitchen operations. You will also mentor junior staff, ensuring food safety standards and efficient kitchen performance in a fast-paced, high-standard environment.
Key Responsibilities:
- Prepare high-quality dishes across various kitchen sections, with a strong focus on a la carte, buffet, larder, mise-en-place, room service, and banquets.
- Ensure food safety, cleanliness, and organization in the kitchen.
- Contribute to the development of new menu items to enhance the guest dining experience.
- Mentor and supervise junior staff, offering guidance and training.
- Apply diverse cooking styles and techniques to deliver exceptional dishes.
- Foster strong communication and coordination within the kitchen brigade.

Key Requirements:
- Trade qualifications and previous experience in the hotel industry preferred.
- Extensive experience in a la carte
- Knowledge of food safety requirements.
- Service-oriented with an eye for detail.
- Excellent time management skills with the ability to multitask.
- Flexible and able to embrace and respond effectively to change.
