ibis Melbourne Glen Waverley is located just 25 minutes east of Melbourne CBD and offers 155 modern guest rooms, the welcoming Ibis Kitchen & Bar, and four flexible meeting rooms accommodating up to 120 delegates. Perfectly positioned as the gateway to the Dandenong Ranges, the Yarra Valley Food & Wine District, the Mornington Peninsula, Phillip Island, and in the heart of lively Glen Waverley, our hotel attracts both business and leisure travellers seeking comfort, convenience, and exceptional service.
We’re looking for a Chef de Partie with a strong a la carte background to join our dynamic kitchen team. In this role, you’ll create exceptional dishes and oversee daily kitchen operations, all while ensuring our guests enjoy an outstanding dining experience. You’ll mentor junior team members, uphold the highest food safety standards and help keep the kitchen running efficiently in a fast-paced, high-performance environment.
Your role will include (but not limited to):
- Lead and mentor junior staff, providing guidance, training and support to help them grow
- Apply diverse cooking techniques to consistently deliver exceptional dishes
- Maintain a clean, organised and compliant kitchen that meets all food safety standards
- Strong a la carte experience with a proven ability to deliver high-quality dishes
- Thorough understanding of food safety standards and best practices
- Ensuring exceptional food standards, from preparation to presentation.
- Monitor and control food waste, stock levels, and kitchen resources.
- Assist the Head Chef to lead the kitchen team and promote a positive working culture at all times.
What We’re Looking For:
- A deep understanding of food trends, sustainability, and seasonal produce to drive creativity.
- A commitment to excellence in food safety, hygiene, and workplace health & safety standards.
- Proven experience in a similar role within a busy, high-volume kitchen environment.
- Relevant trade qualifications (Certificate III in Commercial Cookery or equivalent).
- Strong technical cooking skills across a variety of techniques and cuisines.
- Availability to work evenings across a 7-day roster.
- Excellent communication skills and a professional approach
- Proven leadership capability, with experience guiding and supervising junior chefs during service.
- Outstanding time management skills, with the ability to multitask in a fast-paced environment
- Sound understanding of food safety, hygiene, and HACCP standards.
