Dans ce cadre-là, l’hôtel Le Royal Monceau - Raffles Paris, Palace entièrement rénové par Philippe Starck, est composé de 149 chambres et suites dont 3 appartements privés, d’un Spa unique, de quatre restaurants : Matsuhisa Paris, dédié à la gastronomie péruvo-japonaise par le Chef Nobu, Il Carpaccio, italien étoilé en partenariat avec Da Vittorio***, La Cuisine connu pour ses petits déjeuners et brunchs d’exception, et Le Bar Long proposant une carte internationale tout au long de la journée, d’innovants cocktails et de délicieux tapas. L’hôtel est connu comme le plus parisien et contemporain des Palaces à travers : une Art Concierge – une salle de cinéma - une galerie d’Art - un concept store La Librairie des Arts.

En tant que Chef de Partie au sein du Restaurant Matsuhisa, vous aurez un rôle clé dans la préparation et la réalisation de plats raffinés, alliant traditions japonaises et inspirations péruviennes.
Vous travaillerez sous la supervision directe du Chef de Cuisine et aurez pour mission d’assurer la qualité et la constance des mets proposés, tout en respectant les normes d’hygiène et de sécurité en vigueur.
MISSIONS
- Préparer et exécuter des plats créatifs et savoureux dans le respect des recettes établies par le Chef Nobu.
- Gérer et organiser votre poste de travail (poisson, viande, garnitures, etc.).
- Assurer la mise en place et veiller à la bonne organisation des services.
- Superviser les commis de cuisine et leur apporter un soutien technique.
- Contrôler la qualité des produits et veiller à leur bonne utilisation pour minimiser les pertes.
- Respecter strictement les normes HACCP et les règles d’hygiène.
- Participer à la réception et au contrôle des marchandises.
- Expérience confirmée en tant que Chef de Partie dans des établissements de standing (idéalement dans un palace ou un restaurant gastronomique).
- Bonne connaissance des techniques culinaires japonaises et internationales.
- Passion pour la cuisine fusion et ouverture à l’innovation.
- Capacité à travailler en équipe.
- Connaissance approfondie des normes d’hygiène et de sécurité alimentaire.
- Rigueur, créativité et souci du détail.
- Bonne maîtrise du français. L’anglais est un plus.
