Job Description

As Head Chef, you will lead the end-to-end kitchen operation, driving both culinary excellence and commercial performance in a fast-paced regional environment.

This is a hands-on leadership role requiring strong operational discipline, team development capability, and the ability to deliver consistent, high-quality food while managing cost, labour, and compliance.

Key responsibilities include:

  • Leading daily kitchen operations across breakfast, lunch, dinner, and functions
  • Designing and executing menus aligned with brand standards and local market demand
  • Driving food quality, presentation, and consistency across all service periods
  • Managing food cost, wastage, stock control, and supplier relationships
  • Leading, coaching, and developing a small kitchen team in a regional setting
  • Ensuring full compliance with food safety, WHS, and Accor brand standards
  • Collaborating with the General Manager on commercial performance, promotions, and guest experience
  • Supporting conference and group business with tailored catering solutions

This role is ideal for a chef who thrives in autonomy, enjoys building team capability, and understands the commercial realities of a regional hotel operation.


Qualifications

To be successful in this role, you will bring a balance of culinary expertise, leadership capability, and commercial awareness:

  • Proven experience as a Head Chef or Senior Sous Chef ready to step up
  • Strong understanding of cost control, rostering, and kitchen financials
  • Demonstrated ability to lead and develop teams, particularly in smaller or regional environments
  • Experience across à la carte, buffet, and function service
  • Solid knowledge of food safety standards and compliance requirements
  • Ability to work independently, take ownership, and drive standards without heavy structure
  • Flexibility and resilience to succeed in a regional location

Highly regarded:

  • Experience within hotel or multi-outlet environments
  • Previous experience working in remote or regional locations
  • Understanding of Accor systems and brand standards
