Food and Beverage Supervisor

Innovative and stylish, Mantra Melbourne Epping represents a new standard in hotel accommodation just north of the CBD. This isn’t your standard supervisor role.

 

Based at Mantra Melbourne Epping, you’ll operate across a dynamic, multi-venue environment that brings together Republic Tavern, Trader Restaurant, and Conference & Events — all under one roof — alongside our on-site brewery (Beer Republic) and distillery (Twist Distilling).

 

No two days look the same — and that’s exactly the point.

 

This role is designed for leaders who want exposure beyond a single outlet. You’ll build capability across multiple service environments:

  • High-volume, fast-paced service in Republic Tavern
  • Refined, guest-focused service in Trader Restaurant
  • Large-scale Conference & Events execution

 

One shift you might be leading the floor through a high-energy Tavern service, pouring beers and driving pace. The next, welcoming guests early in the morning and delivering a smooth, engaging breakfast buffet experience in Trader. Then stepping into Conference & Events, hosting anything from intimate seated dinners to large-scale canapé functions and showcase-style Trader events. It’s fast-paced, hands-on, and ideal for someone ready to step into a broader leadership role.



 

Purpose

As a Food & Beverage Supervisor, you will support the Head of Department in driving operational performance across multiple outlets. You will lead by example, ensuring consistent, high-quality service while developing your team and contributing to a profitable and well-executed operation.

 

Primary Responsibilities

  • Supervise daily operations across Republic Tavern, Trader Restaurant, and Conference & Events
  • Lead and support team members to deliver friendly, efficient, and professional service
  • Allocate duties and manage team performance during service to maximise productivity
  • Conduct pre-service briefings and support post-service reviews where required
  • Assist with training, onboarding, and ongoing development of team members
  • Maintain strong communication across departments, particularly with the kitchen, to ensure smooth service delivery
  • Ensure all outlets are set and ready for service in line with operational standards
  • Support stock control, ordering, and maintaining par levels
  • Monitor labour and assist with rostering in line with business levels and budget expectations
  • Assist with daily reporting and reconciliation of takings
  • Handle guest feedback, enquiries, and complaints in a professional and solution-focused manner
  • Ensure compliance with licensing, WHS, and food safety requirements at all times

 

Leadership & Culture

  • Lead by example, demonstrating Accor values and Heartist culture in all interactions
  • Support a positive, inclusive team environment focused on development and accountability
  • Coach and mentor team members to build capability across multiple service styles
  • Step into a leadership role in the absence of senior management when required

 

Skills & Experience

  • Previous experience in a supervisory role within hospitality or hotel environment
  • Strong operational knowledge across food & beverage service styles
  • Confident in leading teams in fast-paced, high-volume environments
  • Excellent communication, organisation, and time management skills
  • Strong guest focus with the ability to resolve issues effectively
  • RSA required
  • Flexibility to work across a rotating roster including mornings, evenings, weekends, and public holidays
