About Orient Express Venezia
Orient Express will open its second hotel in Italy at the exceptional in Venice. Architect and interior designer Aline Amar d’Amman, alongside her studio Culture in Architecture, has been entrusted to design and decorate the space.
Venice, once the gateway to Constantinople and a mythical stop on the legendary Orient Express train – that opened its doors in 1919 with the completion of the Simplon tunnel linking Switzerland to Italy – will be the home of the second Orient Express hotel, set to open in 2026.
Il Demi Chef de Partie è un membro fondamentale del nostro team di Cucina ed è responsabile di supportare lo Chef de Partie nella supervisione di una specifica sezione della cucina, garantendo che la preparazione e la presentazione dei piatti rispettino i più alti standard di lusso e raffinatezza.
Questo ruolo svolge una funzione chiave nel mantenere la coerenza, la creatività e la qualità che contraddistinguono la nostra esperienza gastronomica a cinque stelle. Con un approccio operativo e pratico, il Demi Chef de Partie contribuisce al fluido svolgimento delle attività di cucina, affiancando e formando i membri più junior del team e sostenendo i valori dell’hotel basati su eccellenza, precisione e centralità dell’Ospite.
Responsabilità principali
- Assiste lo Chef de Partie nella gestione della sezione di cucina assegnata, assicurando preparazione, organizzazione e qualità durante tutti i turni di servizio.
- Prepara, cucina e presenta i piatti in conformità alle ricette, agli standard di impiattamento e alle tempistiche stabilite dall’Executive Chef.
- Cura la mise en place e garantisce che tutte le preparazioni siano completate in modo puntuale, ordinato e igienico.
- Monitora la qualità e la freschezza degli ingredienti, comunicando tempestivamente eventuali incongruenze o carenze alla direzione di cucina.
- Assicura che tutta la produzione alimentare rispetti le normative in materia di salute e sicurezza, gli standard HACCP e i protocolli di igiene alimentare dell’hotel.
- Supporta la formazione e lo sviluppo dei Commis Chef e dei tirocinanti di cucina, fornendo guida e feedback per accrescerne competenze e sicurezza professionale.
- Partecipa alle discussioni sullo sviluppo del menu, alle degustazioni e alle iniziative di innovazione guidate dall’Executive Chef e dai Sous Chef.
- Collabora al controllo delle scorte, alla gestione dell’inventario e alle richieste giornaliere, contribuendo al controllo dei costi e agli obiettivi di sostenibilità.
- Garantisce l’uso corretto delle attrezzature di cucina, mantenendole in buone condizioni e segnalando tempestivamente eventuali necessità di riparazione.
- Collabora con l’intero team di cucina e di sala per offrire a ogni Ospite un’esperienza gastronomica fluida ed eccezionale.
- Dimostra solide capacità di gestione del tempo, multitasking e problem solving durante i periodi di servizio ad alta intensità.
- Mantiene standard elevati di cura personale e igiene, in linea con la professionalità richiesta in un ambiente culinario di lusso.
- Si mantiene costantemente aggiornato sulle tendenze culinarie, sulle tecniche e sugli ingredienti stagionali, promuovendo il miglioramento continuo e la creatività.
- Rispetta tutte le politiche dell’hotel in materia di salute, sicurezza ed emergenze, garantendo un ambiente di lavoro sicuro e conforme.
- Incarna la cultura dell’hotel basata su eccellenza, rispetto e lavoro di squadra, fungendo da esempio per i colleghi più junior.
- Formazione culinaria formale presso un istituto accreditato o una scuola alberghiera.
- Minimo 2 anni di esperienza in una cucina professionale, di cui almeno 1 anno come Commis o Demi Chef de Partie, preferibilmente in contesti di hotellerie di lusso o fine dining.
- Solida base culinaria con conoscenze avanzate delle tecniche di preparazione, dell’impiattamento e delle operazioni di cucina.
- Comprovata capacità di gestire una sezione di cucina con minima supervisione e grande attenzione ai dettagli.
- Buona conoscenza delle norme di sicurezza alimentare, delle pratiche di sanificazione e degli standard HACCP.
- Attitudine positiva, forte etica del lavoro e desiderio di crescita professionale all’interno di un team ad alte prestazioni.
- Efficaci capacità comunicative e attitudine alla formazione e al mentoring dei membri junior del team.
- Flessibilità nel lavorare su diverse sezioni della cucina, adattandosi alle esigenze operative.
- Fluente conoscenza della lingua italiana; una buona conoscenza dell’inglese è preferibile, ulteriori lingue costituiscono un plus.
- Diritto legale a lavorare in Italia.
