El/la Chef de Partie será responsable de supervisar y ejecutar la preparación de alimentos dentro de la partida asignada, asegurando el cumplimiento de los estándares de calidad, presentación, higiene y consistencia establecidos por Hyde. Trabajará de la mano con el Sous Chef y el Chef Ejecutivo para garantizar una operación eficiente, organizada y alineada con la experiencia gastronómica del hotel.
Funciones principales
- Preparar, cocinar y presentar los alimentos de acuerdo con recetas, estándares de calidad y lineamientos de la marca.
- Supervisar la correcta operación de la partida asignada, asegurando orden, limpieza, mise en place y flujo eficiente del servicio.
- Coordinar y apoyar a los miembros de equipo de cocina dentro de su estación, promoviendo buenas prácticas, disciplina y trabajo en equipo.
- Asegurar el cumplimiento de normas de higiene, seguridad alimentaria, manipulación de alimentos y procedimientos.
- Controlar el uso adecuado de ingredientes, porciones, mermas, inventarios y equipos de cocina.
- Revisar la calidad, frescura y presentación de los productos antes, durante y después del servicio.
- Apoyar en la recepción, almacenamiento y rotación adecuada de productos, siguiendo el sistema PEPS.
- Colaborar en la creación, prueba y mejora de recetas, menús, especiales y experiencias culinarias.
- Reportar cualquier necesidad de mantenimiento, faltante de producto, desviación de calidad o situación operativa al Sous Chef o Chef Ejecutivo.
- Contribuir a mantener un ambiente de cocina profesional, seguro, colaborativo y alineado con la cultura de Hyde.
- Realizar otras funciones relacionadas con la operación culinaria que le sean asignadas por su jefe directo.
- Experiencia previa como Chef de Partie, Demi Chef de Partie o posición similar en hotelería, restaurantes, lifestyle o alta cocina.
- Formación en Gastronomía, Artes Culinarias o carrera afín, preferentemente.
- Conocimiento sólido de técnicas de cocina, preparación de alimentos, mise en place, emplatado y estándares de presentación.
- Conocimiento de normas de higiene, seguridad alimentaria, manipulación de alimentos y procedimientos HACCP.
- Capacidad para trabajar en una operación dinámica, bajo presión y con altos estándares de calidad.
- Habilidad para organizar la estación asignada, controlar tiempos, porciones, mermas e inventarios básicos.
- Capacidad para guiar y apoyar a los miembros de equipo dentro de su partida.
- Actitud profesional, disciplinada, proactiva y orientada al trabajo en equipo.
- Disponibilidad para trabajar en horarios rotativos, fines de semana y días festivos.
- Español requerido; inglés deseable.
