Pullman Quay Grand Sydney Harbour is home to Flaminia, our signature restaurant overlooking the harbour at Circular Quay. Created in collaboration with the acclaimed Pilu restaurant, Flaminia showcases refined Italian dining with a contemporary edge — combining culinary craftsmanship with elevated, attentive service.
We are seeking a driven and passionate Assistant Restaurant Manager to support the continued success of the venue. You’ll work closely with the Restaurant Manager and leadership team to deliver exceptional guest experiences, lead front-of-house operations, and maintain the high standards expected of a premium, hatted-style dining environment. Candidates with experience in hatted or award-winning venues will be highly regarded.

- Proven leadership experience within premium, hatted, or luxury dining environments
- A strong focus on service excellence and guest engagement
- Confidence leading, coaching, and developing front-of-house teams
- Strong operational knowledge across service, rostering, and performance standards
- A proactive mindset and attention to detail in a fast-paced environment
