Le Cost Contrôleur est responsable de l’analyse, du contrôle et de l’optimisation des coûts liés aux opérations de l’hôtel, en particulier dans les services F&B (nourriture et boissons). Il/elle veille à la conformité des procédures, à la maîtrise des dépenses et à l’amélioration des marges opérationnelles.
RESPONSABILITÉS PRINCIPALES :
1. Contrôle des coûts F&B :
Contrôler les consommations de nourriture et de boissons par point de vente.
Réaliser les inventaires mensuels avec les équipes F&B et cuisine.
Analyser les écarts entre les consommations théoriques et réelles.
Calculer les ratios de coûts (food cost, beverage cost) et recommander des actions correctives.
2. Suivi des achats et des stocks :
Valider les bons de commande et vérifier la conformité des livraisons.
Contrôler les prix d’achats et surveiller les variations.
S'assurer du bon enregistrement des entrées et sorties de stock.
Travailler en étroite collaboration avec le service des achats et les chefs de service.
3. Contrôle interne :
S’assurer du respect des procédures d’achat, de stockage et d’utilisation des produits.
Mettre en place ou renforcer les contrôles internes pour éviter les pertes, vols ou gaspillages.
Vérifier les mouvements de stock et les transferts inter-services.
4. Reporting et analyse :
Préparer des rapports réguliers sur les coûts F&B, les écarts et les marges.
Participer aux clôtures mensuelles et à l’élaboration du budget.
Proposer des recommandations pour améliorer la rentabilité.
Formation en finance, gestion, hôtellerie-restauration ou équivalent.
Expérience confirmée de 2 à 3 ans dans un poste similaire, dans le secteur hôtelier.
Connaissance des logiciels de gestion F&B (Opera, Sun, etc.).
Excellente maîtrise d’Excel et bonne aisance avec les outils de reporting.
Rigueur, intégrité, sens du détail et esprit d’analyse.
Esprit d’équipe et bon relationnel avec les opérationnels.
Anglais professionnel est un atout.
