Situé sur la presqu’île de Quiberon, l’hôtel Mercure ouvre ses portes après une rénovation totale. Cet hôtel 4* est composé de 80 chambres, d’un restaurant proposant une cuisine portée sur l’océan, d’une piscine intérieure avec jacuzzi, hammam, sauna et cabines de soins.
Rattachement
Chef de partie, Second de cuisine, Chef de cuisine, en fonction de l'établissement
• Prépare et vérifie la vaisselle en amont et en aval du service
• Lave à la main les pièces spécifiques
• Réapprovisionne en vaisselle les différents postes de cuisine
• Entretien et nettoie le matériel de plonge
• Connaît les produits lessiviels et Approvisionne les machines en produits
• Organise et Assure la plonge durant le service en fonction des contraintes (bacs à couverts, trempage, disposition)
• Range la vaisselle et le matériel de cuisine
• Entretien les locaux (salle et cuisine + extérieur)
• Entretien et nettoie le matériel de cuisine (micro-ondes, friteuse, ...)
• Trie les poubelles, sort, vide et nettoie les poubelles
• Cuit les denrées, décongèle, pèse les produits
• Lave et prépare les fruits et légumes (désinfection)
• Assure les mises en place complètes des différents postes de travail
• Fabrique, dresse les plats, conformément aux fiches techniques et en fonction des directives du responsable
• Adapte son rythme de travail en fonction de l'affluence, des évènements et des clients.
• Trie et range le linge
• Accompagne les nouveaux collaborateurs sur son domaine de compétence (par délégation)
