Rattaché au chef exécutif le chef de partie - PDJ - aura mission d'assurer la préparation, la mise en place, le service et la supervision de la partie petit déjeuner dans le respect des standards de qualité, d’hygiène et de sécurité alimentaire de Fairmont la Marina Rabat-Salé.
Responsabilités principales :
Préparer et dresser les mets destinés au petit déjeuner (buffets, room service, commandes à la carte)
Garantir la fraîcheur, la qualité et la présentation des produits
Superviser l’équipe dédiée au service du petit déjeuner (1/2 chefs de partie, commis, apprentis, stagiaires)
Mettre en place le poste de travail et anticiper les besoins en matières premières
Respecter scrupuleusement les règles d’hygiène HACCP et les normes de sécurité
Veiller à la bonne rotation des produits et à la gestion des stocks de la section petit déjeuner
Participer au nettoyage et au rangement des cuisines après le service
Être force de proposition pour l’évolution de l’offre petit déjeuner (variété, saisonnalité, tendances)
Collaborer avec les autres sections de la cuisine pour assurer une fluidité de service
Compétences requises :
Excellente maîtrise des cuissons, viennoiseries, œufs, produits laitiers, jus frais, etc.
Organisation, ponctualité et efficacité dans un service matinal
Sens aigu du détail et de la présentation
Rigueur dans l’application des règles d’hygiène et de sécurité
Capacité à gérer une petite équipe et à travailler en autonomie
Profil recherché :
Diplôme en cuisine ou équivalent
Expérience confirmée dans une fonction similaire, idéalement en hôtellerie de luxe
Bonne condition physique (travail debout et horaires matinaux)
Passion pour la cuisine et sens du service client
