Chef de Partie

Innovative and stylish, Mantra Melbourne Epping represents a new standard in hotel accommodation just north of the CBD. This isn’t your standard kitchen role.

 

Based at Mantra Melbourne Epping, you’ll work across a dynamic, multi-venue operation that brings together Republic Tavern, Trader Restaurant, and Conference & Events — all under one roof — alongside our on-site brewery (Beer Republic) and distillery (Twist Distilling).

No two days look the same — and that’s exactly the point.

 

This role is designed for chefs who want more than just one section or one style of service. You’ll build capability across multiple kitchen environments:

  • High-volume, fast-paced service in Republic Tavern
  • Refined, service-driven dining in Trader Restaurant
  • Large-scale production and execution within Conference & Events

 

One shift you might be leading a section through a busy Tavern service. The next, plating for a corporate event or supporting a refined à la carte offering. It’s hands-on, fast-paced, and built for chefs who want exposure, development, and variety.



 

Purpose

As Chef de Partie, you will play a key role in delivering consistent, high-quality food across multiple outlets. Working closely with the wider kitchen brigade, you will contribute to service delivery, team development, and the ongoing evolution of our food offering.

 

Primary Responsibilities

  • Manage your section efficiently across varying service styles and outlets
  • Support service across Republic Tavern, Trader Restaurant, and Conference & Events as operationally required
  • Take ownership at the pass when required, ensuring quality, consistency, and timely service
  • Maintain strong control of food cost, waste management, and labour within your section
  • Deliver consistently high-quality, well-presented dishes aligned with brand and venue standards
  • Train, mentor, and support junior team members across the kitchen brigade
  • Maintain a clean, safe, and compliant kitchen environment with a strong focus on food safety

 

Skills & Experience

  • Previous experience as a Demi Chef or Chef de Partie in a professional kitchen
  • Experience working across multiple service styles or high-volume environments highly regarded
  • Strong understanding of HACCP, food safety, and compliance standards
  • A leadership mindset with a passion for developing junior chefs
  • Certificate in Commercial Cookery (required) and Food Safety certification (preferred)
  • Strong organisational and time management skills across prep, service, and cost control
  • Flexibility to work across a rotating roster including mornings, evenings, weekends, and public holidays
