Job Description

Director of Food & Beverage

The Director of Food & Beverage is responsible for supervising / managing / overseeing all Food & Beverage functions including Conference Services, Banquets, Outlets, Culinary, and Stewarding. Reporting to the Hotel Manager, F&B Director will be crucial to creating and maintaining a successful F&B experience according to The Fairmont Century Plaza standards.

What you will be doing:

  • Plan and direct the functions of the F&B Department to meet the daily needs of operation.
  • Maximize the financial return of all F&B operations.
  • Implement effective control of food, beverage and labor costs.
  • Forecast revenues and labor for all outlets.
  • Maintain solid and open communications with all hotel departments.
  • Develop and communicate F&B promotions within the hotel to guests and colleagues.
  • Develop creative/innovative menus and wine lists.
  • Oversee F&B technology including POS, OpenTable and Restaurant Manager
  • Analyze and conduct quarterly menu analysis and menu engineering to maximize revenue generation and profitability
  • Track record building outlet volume and average checks.
  • Monitor all guest service standards, constantly seeking ways to improve product and service as well as increase volumes and profits
  • Work in co-operation with the Executive Chef and Sous-Chefs to ensure top quality, and to see that below standard items are never accepted or served.
  • Handle all guest complaints in the F&B area and to be charge of obtaining maximum results in the utilization and appearance of the food and beverage areas, the quality levels, performance and standards of service and develops new techniques of service towards maximum guest satisfaction at minimum operating costs.

Qualifications

Your experience and Skills include:

  • 6 years of F&B management experience with least 4 years of experience managing multiple outlets in a Hotel environment, Independent Restaurants and Beverage Operations.
  • University/college degree in a related discipline preferred
  • Strong computer skills, proficient with MS Office (Word, Excel, Outlook, etc.)
  • Strong interpersonal, communications and presentation skills, both written and oral
  • Self-confident and able to communicate easily with all levels of an organization from line colleagues to Executives
  • Knowledge of P.O.S. system of hotel.
  • Financial knowledge must have working knowledge of Profit and Loss statement
  • Experience in the following areas: Room Service, Stewarding, Banquets, Fine dining, All day restaurant.
