Gestionar el funcionamiento operativo y administrativo de la cocina, garantizando la entrega de un servicio de alimentación enmarcado dentro de los estándares de calidad definidos por la cadena, manejando eficientemente los inventarios, pedidos a compras, la solicitud de personal y todo lo inherente a la administración del área.
Ser un líder permanente en su área demostrando capacidad para gestionar los procesos de contratación, inducción, formación y temas contractuales (turnos, asistencia, horas extras, vacaciones, etc.) de su equipo. Junto con supervisar y coordinar a los colaboradores para la entrega de un servicio de acuerdo con los estándares de la marca. Además, de mantener un equipo comprometido y con excelente clima laboral.
Confeccionar la Carta del restaurant, menús ejecutivos y de colaboradores, elaborando fichas técnicas para su reproducción (cantidad, modo de preparación, ingredientes etc.) Supervisar la calidad, elaboración y presentación de los platos y menús diarios garantizando la correcta manipulación según la legislación higiénica sanitaria
Contribuir con los resultados del área realizando un control de los costos, a través del análisis de informes y estadísticas de los resultados
Coordinar con el área responsable la compra de insumos y revisar los inventarios realizados en el área, garantizando que se encuentren al día las planillas respectivas, controlando las pérdidas de insumos y materiales, y a partir de ello calcular los pedidos de materiales de Big-4, informándoselo al Subgerente de A&B y/o gerente de hotelDesarrollar nuevos proveedores en el área,
Experiencia minima de 1 año
Apoyar las actividades de cocina tanto en la preparación del área y alimentos necesarios para satisfacer al Cliente velando por la seguridad alimentaria exigida, apoyando los controles del área.
Educación Secundaria completa y Formación técnica en gastronomía
