Job Description

The Restaurant Assistant Manager will play a pivotal role in delivering a world-class dining experience across the Mondrian property, including Restaurant & Bar, Café, and In-Room Dining. Supporting the Venue Manager, you will oversee daily operations, ensuring seamless service, operational excellence, and a team culture that reflects Mondrian’s signature hospitality. From curating an exceptional atmosphere, to driving efficiency, and ensuring flawless in-room dining experiences, you will lead by example, enhancing guest engagement and driving business success. With a focus on team leadership, service standards, and operational efficiency, you will help shape a dining experience that meets the highest expectations. 

 

Main Duties/Responsibilities:  

  • Lead day-to-day operations, ensuring smooth execution across the venue. 
  • Ensure guests enjoy a memorable and seamless dining experience that reflects Mondrian's luxury standards. 
  • Develop strong relationships with VIPs and regular guests, personalizing their dining experiences. 
  • Anticipate and respond to guest needs, handling any complaints or feedback professionally and efficiently. 
  • Oversee restaurant reservations, ensuring accurate booking management and personalised seating plans. 
  • Lead by example, consistently delivering polished, intuitive, and engaging service. 
  • Assist the Restaurant Manager in setting strategic goals and ensuring smooth daily operations. 
  • Work hands-on with the team, providing support during peak service periods. 
  • Supervise restaurant set-up, ensuring perfect execution for special events and VIP bookings. 
  • Coordinate with the culinary team, ensuring seamless service flow and adherence to plating standards. 
  • Oversee opening and closing procedures, ensuring security, cleanliness, and correct cash handling protocols. 
  • Ensure all operations comply with health, safety, and liquor licensing regulations. 

Qualifications

  • Experience in a leadership role within luxury F&B venues, hotels, or high-end restaurants. 
  • Passion for hospitality, service excellence, and creating unforgettable guest moments. 
  • Strong operational acumen, with the ability to balance hands-on service with strategic oversight. 
  • Knowledge of POS systems, financial reporting, rostering, and inventory management. 
  • Exceptional problem-solving and decision-making skills in high-energy environments. 
  • Current RSA certification (Responsible Service of Alcohol) required.  
  • Ability to work a variety of shifts including evenings, weekends and public holidays.   
  • Must have valid Australian Working Rights.
