Estamos buscando un Chef de Partie con talento y experiencia para unirse a nuestro equipo culinario en Santiago de Chile. Como miembro clave de nuestro personal de cocina, será responsable de supervisar una sección específica de la cocina, garantizando los más altos estándares de calidad y presentación de los alimentos.
- Gestionar y operar una sección designada de la cocina, como salsas, pescado o pastelería.
- Preparará, cocinará y presentará los platos de acuerdo con las especificaciones del menú y las normas de calidad
- Colabore con el Chef Ejecutivo y el Sous Chef para desarrollar nuevos platos del menú y especiales
- Garantice unas prácticas adecuadas de almacenamiento, manipulación y saneamiento de los alimentos dentro de su sección
- Forme y supervise al personal de cocina subalterno, incluidos los cocineros auxiliares y los ayudantes de cocina
- Mantenga el inventario y pida los suministros para su estación según sea necesario
- Ayude en la planificación del menú y en las medidas de control de costes
- Adapte las recetas para dar cabida a restricciones dietéticas y alergias
- Contribuir a la eficiencia general y al buen funcionamiento de la cocina
- Incorpore ingredientes y técnicas locales chilenos en los platos del menú cuando sea apropiado
- Título o diploma culinario de una institución reconocida
- Un mínimo de 2-3 años de experiencia como Chef de Partie o en un puesto similar
- Sólidos conocimientos de diversos métodos de cocción, ingredientes y equipos de cocina
- Excelentes habilidades con el cuchillo y capacidad para trabajar eficazmente en un entorno de ritmo rápido
- Certificación vigente en seguridad alimentaria
- Dominio de la planificación de menús, control de costes de los alimentos y gestión de inventarios
- Capacidad para dirigir y motivar a un equipo de personal de cocina subalterno
- Gran capacidad de comunicación y organización
- Creatividad y pasión por la innovación culinaria
- Resistencia física para trabajar largas horas en un entorno de cocina exigente
- Fluidez en español e inglés (preferible)
- Familiaridad con la cocina chilena y los ingredientes locales (preferido)
- Experiencia en restaurantes u hoteles de alta gama (preferido)
