Originally built in 1888, Hotel Woolstore 1888 is the fourth oldest surviving wool store in Sydney. Today, it serves as a luxurious hotel within the Accor portfolio, offering 90 meticulously designed guestrooms, an acclaimed restaurant and bar, and versatile spaces for meetings and events.

We are currently seeking a skilled and passionate Junior Sous Chef to join our culinary team at Percy, our award-winning restaurant.


Job Description

As Junior Sous Chef, you will enhance our culinary team and contribute to delivering outstanding dining experiences. In this role, you will support our Executive Chef in ensuring the seamless operation of our outlet, upholding the highest standards of quality, profitability, and industry reputation. If you have a talent for crafting exceptional dishes and leading a team effectively, this position offers a valuable opportunity to advance your career.

Additionally, you will mentor and guide junior kitchen staff, helping them develop their skills and reach their full potential. Your responsibilities will include overseeing food preparation, managing stock levels, and ensuring service areas are consistently prepared for peak efficiency.

Staying abreast of industry trends and fostering a cohesive and motivated kitchen environment will be crucial as you help maintain our high standards. Additionally, you will be involved in menu design, implementing special promotions, and managing cost control, leveraging your expertise to contribute to our success.


Qualifications

  • A skilled Chef De Partie ready to advance their culinary career
  • Minimum qualification required: Certificate III in Commercial Cookery
  • Experience in a hotel environment is highly desirable
  • Proven ability to manage staffing needs, plan and delegate tasks, and motivate the team to meet daily objectives
  • Comprehensive knowledge of food hygiene, HACCP, and workplace health and safety (WH&S)
  • Positive attitude towards the industry and a strong understanding of menu items and seasonal ingredients
  • Willingness to work a rotating roster, including weekends and public holidays
