What does a sous chef do? Everything you need to know about this essential kitchen role

As the Chef's right-hand man, the Sous-Chef or Second Chef coordinates the work of all teams and promotes the development of the members of his brigade, responding to their aspirations and specific needs.

Exemplary leadership and high standards guide each step of his daily life, from the sublimation of dishes to compliance with Accor group standards, including inspiring a positive dynamic within his team.

Diverse missions, a central role

The Sous-Chef ensures the culinary excellence and reputation of his cuisine. 

  • He supervises and actively participates in the preparation and cooking of dishes.
  • It ensures compliance with quality standards, even the most demanding.
  • He controls portions, preparation techniques and garnishes, to ensure that each plate reflects Accor's characteristic know-how and excellence.
  • His attention to detail and high standards allow him to ensure consistent quality in his teams' creations, offering customers an impeccable gastronomic experience. 

As guarantor of food safety and hygiene, the Sous-Chef:

  • Strictly applies the standards in force.
  • Ensures the cleanliness of equipment and workstations.
  • Reacts quickly in case of malfunction or waste.

In order to optimize inventory and cost management within the kitchen, its function is to:

  • Limit losses while guaranteeing product quality.
  • Oversee supplies and optimize resource use.
  • Keep a close eye on storage areas to reduce food losses and ensure efficient and sustainable product management.

Finally, the Sous-Chef must promote cohesion and communication within his teams, in particular by:

  • Encouraging collaboration not only between members of his brigade, but also with other departments of the establishment.
  • Maintaining a positive and respectful working atmosphere.
  • Communicating clearly with his teams and his hierarchy to ensure a smooth organization, in accordance with the Group's values.

The profile required to succeed as a Sous-Chef

To excel as a Sous Chef at Accor, training in culinary arts or equivalent will be highly valued, as well as at least three years of experience in a responsible kitchen position.

You will need to be able to demonstrate a solid knowledge of culinary services, mastering both food safety and hygiene standards and the latest gastronomic trends.
