Q: What’s the first thing you do when you start your shift?
"The first thing I do — and it’s a daily ritual — is walk through all the kitchens to check in with the team. I make sure to say good morning to everyone. A strong, happy team is the heart of any good kitchen."
Q: What’s your favorite part of working at Sofitel Phnom Penh Phokeethra?
"I love that I get to work with premium ingredients — caviar, truffle, lobster, Kobe beef. Not every chef has access to such quality produce, and it’s exciting to create dishes with them. It’s something I’m really proud of."
Q: Any memorable moments with a guest?
"Honestly, every day brings something memorable. Whether it’s a regular guest, a diplomat, or a Hollywood star, my team and I put our heart into every dish. It’s not just about making food — it’s about creating an experience that sparks emotion."
Q: What’s one thing you love about your role?
"I really love mentoring my team. Watching them grow, helping them develop their skills, and knowing I’ve played a part in their journey is so rewarding. I remember every chef who taught me something important, and I hope they’ll remember me the same way. It’s all about leaving a legacy."
