Green Coast Hotel - MGallery Collection, part of BALFIN Group is a unique hotel offering a luxurious escape along the pristine shores of Caesar’s Beach with crystal-clear Ionian waters with 131 elegantly designed guest rooms including 4 luxury & 1 presidential suite, modern architecture, and a focus on sustainability. The hotel includes various F&B spaces consisting in an à la carte restaurant, a destination lobby bar, a pool bar with direct access to the beach area, meetings, Conference & Exhibition spaces consisting in 2 meetings rooms with a total capacity of up to 100 guests welcoming corporates & institutions to organize high-level events of the same certified standards as anywhere else in Europe. Responsibility for desserts and pastries in à la carte service as well as for the preparation of buffets in the banquet area. Production and preparation of desserts, cakes, and sweets for all F&B outlets. Ordering and quality control upon receipt of goods. Preparation of dishes and organizational handling of shifts during all service periods. Training of our apprentices. Ensuring proper storage of food and monitoring storage temperatures. Ensuring smooth operation during shifts. Training and onboarding of new kitchen staff.
Main Responsibilities and Duties
- Prep all Pastry food prep, cook, and plate meals, and plate presentation of menu items according to the restaurant's standards.
- Monitor the flow of service and respond to customer needs or requests.
- Ensure that all bakeries are highly consistent in quality, freshness, and temperature are maintained.
- Maintain clean pastry kitchen area by keeping dishes, utensils, and equipment ready to use, as well as cleaning surfaces and windows when necessary.
- Stock inventory as needed.
- Ensure that food costs are kept within budgeted limits.
- Keep records of inventory stock orders.
- Report any discrepancies to management.
- Oversee kitchen operations, including ingredient selection, inventory management, and quality control.
- Always maintain compliance with hygiene and safety standards.
- Comply with federal and local health regulations including sanitation, safety, nutrition standards, and food safety code enforcement policies.
- Maintain a safe work environment. Adhere to company safety policies and procedures.
- At least 5 years’ proven experience as Pastry Sous Chef or Pastry Chef de Partie specializing in Arabic cuisine, preferably in a luxury hospitality environment.
- Deep knowledge of traditional Arabic recipes, spices, and cooking techniques.
- Ability to work both fast and accurately.
- Team spirit.
- Flexibility to take on various shifts.
- Certification from a culinary school is an advantage.
- Experience at ACCOR is an advantage.
