Job Description

We are seeking an experienced and detail-oriented Sous Chef with a pizza specialty to join our culinary team in Phu Quoc, Vietnam. In this leadership position, you will work closely with our Head Chef to oversee kitchen operations, maintain exceptional food quality standards, and mentor kitchen staff. Your expertise in pizza preparation and culinary innovation will be instrumental in delivering outstanding dining experiences to our guests while ensuring efficient and organized kitchen management.

  • Oversee daily kitchen operations and manage food preparation with a focus on pizza specialty items, ensuring consistency and quality across all dishes
  • Supervise, train, and mentor kitchen staff members, providing constructive feedback and fostering a collaborative work environment
  • Develop and refine pizza recipes and techniques, incorporating both traditional Italian methods and contemporary culinary innovations
  • Maintain strict adherence to food safety, sanitation, and hygiene standards in compliance with local regulations
  • Monitor inventory levels, manage food costs, and optimize ingredient sourcing to maximize efficiency and profitability
  • Prepare and plate dishes to exacting standards, conducting quality control checks before service
  • Manage kitchen equipment maintenance and troubleshoot operational issues to minimize downtime
  • Collaborate with the Head Chef on menu planning, seasonal specials, and culinary strategy
  • Coordinate with front-of-house staff to ensure seamless service delivery and guest satisfaction
  • Maintain detailed records of food preparation, inventory, and kitchen performance metrics

Qualifications

  • Minimum 5 years of professional culinary experience, with at least 3 years in a sous chef or senior kitchen leadership role
  • Advanced expertise in pizza-making techniques, dough fermentation, and wood-fired oven operation
  • Proven experience managing kitchen teams and training culinary staff
  • Strong knowledge of food safety protocols and current food handling certifications
  • Proficiency in inventory management, cost control, and kitchen budgeting
  • Excellent organizational and time management skills with the ability to multitask in a fast-paced environment
  • Strong communication and interpersonal skills with the ability to lead and motivate a diverse team
  • Creative culinary mindset with experience in menu development and recipe customization
  • Familiarity with both Italian and international pizza styles and ingredients
  • Ability to work flexible hours, including evenings, weekends, and holidays as required
  • Adaptability to working in an international hospitality environment
  • Preferred: Experience in high-volume restaurant operations or resort settings
  • Preferred: Knowledge of ingredient sourcing and supplier relationships
