Marmelo is a restaurant and bar inspired by the coastal cuisine of Portugal and Spain with a focus on fresh and seasonal ingredients. The restaurant celebrates a unique culinary style with a focus on Iberian coastal dining embracing the seafaring and fishing traditions of Port Melbourne. Wood and charcoal cooking methods impart incredible flavours bringing authenticity to the cooking process.
Marmelo is located within Hyde Melbourne Place and operated by multi award-winning, restaurateurs - Ross & Sunny Lusted. Also appointed by Gourmet Traveller as the Victorian Restaurant of the Year 2025.
We are seeking a skilled Chef de Partie to join our dynamic and high-performing kitchen team. Working alongside talented culinary professionals, you will play a key role in creating innovative, beautifully executed dishes that reflect our commitment to quality, creativity, and memorable guest experiences.
Key Responsibilities:
- Take ownership of your section, ensuring the consistent delivery of exceptional food quality, presentation, and service standards.
- Prepare and execute menu items with precision, creativity, and attention to detail, in line with Marmelo's culinary vision and brand standards.
- Collaborate closely with the Head Chef and wider culinary team to ensure seamless kitchen operations and an outstanding guest experience.
- Maintain the highest standards of food safety, hygiene, and workplace organisation within a fast-paced professional kitchen environment.
- Support the development and mentoring of junior team members, fostering a culture of learning, collaboration, and excellence.
- Assist with inventory management, stock control, ordering processes, and waste minimisation initiatives to support operational efficiency and cost management.
- Contribute ideas and expertise to menu development, continuous improvement initiatives, and the ongoing evolution of the culinary offering.
What we’re looking for:
- Proven experience as a Chef de Partie, or a high-performing Demi Chef ready to take the next step in their culinary career.
- A genuine passion for food, with a strong commitment to quality, consistency, and attention to detail.
- Excellent organisational and time management skills, with the ability to perform effectively in a fast-paced, service-driven environment.
- A collaborative and professional approach, combined with creativity and a desire to contribute to an innovative culinary offering.
- Strong understanding of food safety, hygiene, and kitchen best practices.
- A positive attitude, strong work ethic, and commitment to delivering exceptional guest experiences through outstanding cuisine.
